🍽️ Tomato Omelette with Sheep's Cheese

Ingredients
- 8 eggs
- 100 ml heavy cream
- 3 tomatoes
- 1 tbsp butter
- 200 g feta (diced)
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- 2 tbsp chopped basil (for garnish)
Instructions
- 1. Whisk the eggs in a bowl with the cream.
- 2. Season the egg mixture with salt, pepper, and ground nutmeg.
- 3. Wash the tomatoes thoroughly.
- 4. Cut the tomatoes into quarters and remove the seeds.
- 5. Dice the tomato flesh into small cubes.
- 6. Heat butter in a frying pan.
- 7. Lightly sweat the tomato cubes in the hot butter.
- 8. Add the feta cubes to the pan.
- 9. Pour the egg mixture over the tomatoes and cheese.
- 10. Stir the omelette until it begins to set.
- 11. Cover the pan and let the omelette cook on low heat for about 2 minutes.
- 12. Cut the finished omelette into four pieces.
- 13. Arrange the omelette pieces on plates.
- 14. Sprinkle fresh basil over the omelette.
- 15. Serve the dish warm.
