🍽️ Stuffed Tomatoes with Grilled Köfte and Feta

Ingredients
- 4 tomatoes
- 250 g cooked long-grain rice
- 1 tbsp freshly chopped basil
- 1 tbsp lemon juice
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- 1 garlic clove
- 1 shallot
- 2 sprigs parsley
- 2 sprigs oregano
- 600 g lamb mince
- cumin (ground)
- 200 g feta
- 0.5 red onion
Instructions
- 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
- 2. Wash the tomatoes thoroughly.
- 3. Cut off the top lids of the tomatoes.
- 4. Carefully hollow out the inside of the tomatoes.
- 5. Mix the rice with the basil, lemon juice, and one tablespoon of oil.
- 6. Season the rice mixture with salt and pepper.
- 7. Fill the hollowed-out tomatoes with the rice mixture.
- 8. Place the cut-off lids back onto the tomatoes.
- 9. Place the tomatoes on a baking sheet greased with oil.
- 10. Drizzle a little more oil over the tomatoes.
- 11. Bake the tomatoes in the oven for about 15 minutes.
- 12. Peel the garlic clove and the shallot.
- 13. Finely chop the garlic and shallot together.
- 14. Rinse the parsley and oregano.
- 15. Shake the herbs dry.
- 16. Pluck the leaves off the stems.
- 17. Finely chop the herbs.
- 18. Knead the minced meat thoroughly with the chopped garlic, shallot, and herbs.
- 19. Season the meat mixture with salt, cumin, and pepper.
- 20. Form about eight small balls from the meat mixture.
- 21. Thread the meat balls onto wooden skewers.
- 22. Press the balls firmly onto the skewers.
- 23. Shape the balls to be slightly elongated while doing so.
- 24. Brush the skewers with oil.
- 25. Grill the skewers on a hot grill or in a pan.
- 26. Grill the skewers on all sides for 6 to 8 minutes.
- 27. Cut the feta cheese into four slices.
- 28. Arrange the feta slices on a large platter.
- 29. Peel the onion.
- 30. Cut the onion into thin strips.
- 31. Sprinkle the onion strips over the feta.
- 32. Drizzle a little oil over the feta and onions.
- 33. Season the platter with pepper.
- 34. Place the stuffed tomatoes and the skewers next to the platter.
- 35. Serve the dish.
