  1. 1. Wash the basil and arugula under running water.
  2. 2. Shake the greens dry.
  3. 3. Set aside a handful of arugula.
  4. 4. Finely chop the remaining arugula and basil.
  5. 5. Peel the garlic clove.
  6. 6. Roughly chop the garlic.
  7. 7. Add the Pecorino cheese, pine nuts, garlic, and oil to a bowl.
  8. 8. Stir the ingredients well until a creamy sauce forms.
  9. 9. Season the sauce with salt and pepper to taste.
  10. 10. Wash the tomatoes.
  11. 11. Slice the tomatoes into thick rounds.
  12. 12. Spoon a dollop of the herb sauce onto each tomato slice.
  13. 13. Stack the slices back together to reform the tomato.
  14. 14. Garnish the dish with the reserved arugula and a few olives.
  15. 15. Serve the tomatoes immediately.
