🍽️ Fresh Tomatoes with Herby Dip

Ingredients
- 0.5 bunch basil
- 1 bunch arugula (approx. 75 g)
- 50 g Pecorino (freshly grated)
- 30 g pine nuts
- 1 garlic clove
- 7 tbsp olive oil
- salt
- pepper (from the mill)
- 4 tomatoes
- olives (for garnishing)
Instructions
- 1. Wash the basil and arugula under running water.
- 2. Shake the greens dry.
- 3. Set aside a handful of arugula.
- 4. Finely chop the remaining arugula and basil.
- 5. Peel the garlic clove.
- 6. Roughly chop the garlic.
- 7. Add the Pecorino cheese, pine nuts, garlic, and oil to a bowl.
- 8. Stir the ingredients well until a creamy sauce forms.
- 9. Season the sauce with salt and pepper to taste.
- 10. Wash the tomatoes.
- 11. Slice the tomatoes into thick rounds.
- 12. Spoon a dollop of the herb sauce onto each tomato slice.
- 13. Stack the slices back together to reform the tomato.
- 14. Garnish the dish with the reserved arugula and a few olives.
- 15. Serve the tomatoes immediately.
