🍽️ Fresh tomatoes stuffed with prawn salad

Ingredients
- 8 yellow tomatoes
- 1 red bell pepper
- 1 green bell pepper
- 8 kitchen-ready cooked shrimp
- salt
- pepper (from the mill)
- olive oil
- lemons (juice)
- 2 shallots
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut off the top part of the tomato to create a small lid.
- 3. Carefully hollow out the inside of the tomato.
- 4. Wash the bell pepper.
- 5. Cut the bell pepper in half.
- 6. Remove the seeds and white pith from the bell pepper.
- 7. Dice the bell pepper into very small cubes.
- 8. Peel the shallots.
- 9. Finely chop the shallots.
- 10. Place the diced bell pepper and chopped shallots into a bowl.
- 11. Add two tablespoons of oil.
- 12. Add lemon juice.
- 13. Season the mixture with salt and pepper.
- 14. Mix all ingredients well together.
- 15. Take one prawn.
- 16. Fill the hollowed-out tomato with the prawn and some of the vegetable salad.
- 17. Repeat this for all tomatoes.
- 18. Drizzle a little oil over the stuffed tomatoes.
- 19. Serve the tomatoes cold.
