🍽️ Hollow Tomatoes with Herb Cream Cheese

Ingredients
- 8 tomatoes
- 100 g fresh cheese
- 150 g low-fat quark
- 2 tbsp lemon juice
- 0.5 bunch spring onions
- 2 tbsp parsley
- salt
- pepper
- mixed herbs (for garnishing)
Instructions
- 1. Wash the tomatoes thoroughly under running water.
- 2. Cut off the top lid of the tomato with a sharp knife.
- 3. Carefully remove the inside of the tomato (flesh and seeds) using a spoon.
- 4. Place the hollowed-out tomatoes upside down on kitchen paper.
- 5. Let the tomatoes drain briefly to absorb excess moisture.
- 6. Mix the cream cheese and quark thoroughly in a bowl.
- 7. Add the lemon juice to the cheese mixture and stir well.
- 8. Peel the spring onions and slice them into thin rings.
- 9. Finely chop the parsley.
- 10. Set aside a small portion of the spring onions and parsley for decoration.
- 11. Mix the remaining spring onions and parsley into the cheese mixture.
- 12. Season the filling to taste with salt and pepper.
- 13. Carefully fill the cheese mixture into the hollowed-out tomatoes.
- 14. Place the previously cut tomato lids back on top of the filled tomatoes.
- 15. Arrange the tomatoes on a serving plate.
- 16. Decorate the dish with the reserved herbs.
