  1. 1. Wash the tomatoes thoroughly under running water.
  2. 2. Cut off the top lid of the tomato with a sharp knife.
  3. 3. Carefully remove the inside of the tomato (flesh and seeds) using a spoon.
  4. 4. Place the hollowed-out tomatoes upside down on kitchen paper.
  5. 5. Let the tomatoes drain briefly to absorb excess moisture.
  6. 6. Mix the cream cheese and quark thoroughly in a bowl.
  7. 7. Add the lemon juice to the cheese mixture and stir well.
  8. 8. Peel the spring onions and slice them into thin rings.
  9. 9. Finely chop the parsley.
  10. 10. Set aside a small portion of the spring onions and parsley for decoration.
  11. 11. Mix the remaining spring onions and parsley into the cheese mixture.
  12. 12. Season the filling to taste with salt and pepper.
  13. 13. Carefully fill the cheese mixture into the hollowed-out tomatoes.
  14. 14. Place the previously cut tomato lids back on top of the filled tomatoes.
  15. 15. Arrange the tomatoes on a serving plate.
  16. 16. Decorate the dish with the reserved herbs.
