  1. 1. Preheat the oven to 200 degrees Celsius with fan.
  2. 2. Brush a baking dish or casserole dish with some oil.
  3. 3. Wash the tomatoes thoroughly.
  4. 4. Cut off the top lid of each tomato.
  5. 5. Carefully hollow out the inside of the tomatoes.
  6. 6. Place the hollowed tomatoes side by side in the prepared dish.
  7. 7. Mix the eggs with the grated cheese, chopped parsley, and breadcrumbs in a bowl.
  8. 8. Season the filling with salt and pepper to taste.
  9. 9. Fill the tomatoes with the egg and cheese mixture.
  10. 10. Drizzle some oil over the stuffed tomatoes.
  11. 11. Place the tomatoes in the oven for about 20 minutes.
  12. 12. Place the tomato lids back on during the last 5 minutes of baking.
  13. 13. Sprinkle the finished tomatoes with fresh chives before serving.
