🍽️ Baked Stuffed Tomatoes

Ingredients
- Olive oil
- 8 Tomatoes
- 4 Eggs
- 100 g grated cheese (e.g. Alpine cheese)
- 2 tbsp freshly chopped parsley
- 40 g breadcrumbs
- Salt
- Pepper (from the mill)
- Chive rings (for garnishing)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Brush a baking dish or casserole dish with some oil.
- 3. Wash the tomatoes thoroughly.
- 4. Cut off the top lid of each tomato.
- 5. Carefully hollow out the inside of the tomatoes.
- 6. Place the hollowed tomatoes side by side in the prepared dish.
- 7. Mix the eggs with the grated cheese, chopped parsley, and breadcrumbs in a bowl.
- 8. Season the filling with salt and pepper to taste.
- 9. Fill the tomatoes with the egg and cheese mixture.
- 10. Drizzle some oil over the stuffed tomatoes.
- 11. Place the tomatoes in the oven for about 20 minutes.
- 12. Place the tomato lids back on during the last 5 minutes of baking.
- 13. Sprinkle the finished tomatoes with fresh chives before serving.
