🍽️ Crispy Potato and Tomato Gratin

Ingredients
- 800 g potatoes (firm-fleshed variety)
- 5 tomatoes
- 2 tsp thyme
- salt
- pepper (from the mill)
- 2 tbsp parmesan
- olive oil
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Place the unpeeled potatoes in a pot of water and boil them for about 20 minutes until they are almost tender.
- 3. Let the potatoes cool down briefly until you can handle them.
- 4. Peel the potatoes and slice them into 0.5 cm thick rounds.
- 5. Wash the tomatoes and slice them thinly.
- 6. Add 2-3 tablespoons of olive oil to a heat-resistant baking dish and grease it.
- 7. Alternate layers of potato and tomato slices in the dish.
- 8. Drizzle 4 tablespoons of olive oil over the layers.
- 9. Season the dish with salt and pepper to taste.
- 10. Sprinkle fresh thyme leaves over the top.
- 11. Preheat the oven to 200 degrees Celsius convection.
- 12. Place the baking dish in the oven and bake for about 20 to 25 minutes until the potatoes are golden brown.
- 13. Remove the dish from the oven and sprinkle grated Parmesan cheese over the top.
- 14. Return the dish to the oven and bake for another 5 minutes until the cheese is melted and golden brown.
