  1. 1. Wash the potatoes thoroughly under running water.
  2. 2. Place the unpeeled potatoes in a pot of water and boil them for about 20 minutes until they are almost tender.
  3. 3. Let the potatoes cool down briefly until you can handle them.
  4. 4. Peel the potatoes and slice them into 0.5 cm thick rounds.
  5. 5. Wash the tomatoes and slice them thinly.
  6. 6. Add 2-3 tablespoons of olive oil to a heat-resistant baking dish and grease it.
  7. 7. Alternate layers of potato and tomato slices in the dish.
  8. 8. Drizzle 4 tablespoons of olive oil over the layers.
  9. 9. Season the dish with salt and pepper to taste.
  10. 10. Sprinkle fresh thyme leaves over the top.
  11. 11. Preheat the oven to 200 degrees Celsius convection.
  12. 12. Place the baking dish in the oven and bake for about 20 to 25 minutes until the potatoes are golden brown.
  13. 13. Remove the dish from the oven and sprinkle grated Parmesan cheese over the top.
  14. 14. Return the dish to the oven and bake for another 5 minutes until the cheese is melted and golden brown.
