  1. 1. Wash the tomatoes and the cucumber thoroughly under running water.
  2. 2. Cut each tomato in half.
  3. 3. Cut the cucumber lengthwise into four long strips.
  4. 4. Cut the cucumber strips into small, even cubes.
  5. 5. Peel the onions and cut them in half as well.
  6. 6. Cut the onion halves into thin, narrow strips.
  7. 7. Let the sheep's milk cheese (Shafskäse) drain well in a colander.
  8. 8. Cut the drained sheep's milk cheese into cubes of approx. 1 cm.
  9. 9. Let the olives drain well as well.
  10. 10. Place the tomatoes, cucumber cubes, feta cheese, and drained olives into a large bowl.
  11. 11. Roughly chop the parsley and add it to the bowl as well.
  12. 12. Season the mixture with salt and black pepper to taste.
  13. 13. Gently mix all ingredients until well combined.
  14. 14. Divide the salad into individual bowls or onto plates.
  15. 15. Top each plate with the prepared onion strips.
  16. 16. Drizzle a little olive oil over the finished salad.
  17. 17. Serve the salad immediately while fresh.
