🍽️ Fresh Tomato and Vegetable Salad with Herb Dressing

Ingredients
- 2 garlic cloves
- herb salt
- 2 tbsp fruit vinegar
- 4 tbsp sunflower oil
- pepper (from the mill)
- 2 tbsp chopped basil
- 200 g fresh green peas
- 2 red onions
- 200 g corn kernels (can)
- 1 tomato
- basil (for garnishing)
Instructions
- 1. Peel the garlic clove.
- 2. Mash the garlic with some herb salt into a fine paste.
- 3. Add the fruit vinegar.
- 4. Stir the mixture well until the salt has completely dissolved.
- 5. Stir the oil into the marinade.
- 6. Season the marinade generously with pepper and basil.
- 7. Put the peas in boiling water for about 1 minute.
- 8. Drain the peas.
- 9. Rinse the peas with cold water.
- 10. Add the drained peas to the marinade.
- 11. Let the salad marinate for about 30 minutes.
- 12. Peel the onions.
- 13. Slice one onion into rings.
- 14. Finely dice the other onion.
- 15. Add the drained corn kernels to the salad.
- 16. Add the finely diced onions to the salad.
- 17. Mix everything well together.
- 18. Wash the tomatoes.
- 19. Slice the tomatoes.
- 20. Arrange the tomato slices on a plate.
- 21. Taste the salad one last time and adjust the seasoning.
- 22. Place the salad on top of the tomato slices.
- 23. Garnish the salad with fresh basil leaves.
- 24. Sprinkle the onion rings over the top.
- 25. Serve the salad.
