🍽️ Steamed Tomatoes Stuffed with Cabbage and Ginger

Ingredients
- 6 tomatoes
- 0.25 small white cabbage
- 40 g ginger
- 100 ml vegetable broth
- 1 tbsp oil
- sesame oil
- soy sauce
- cayenne pepper
- 2 tbsp coriander (chopped)
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut off the top lids of the tomatoes.
- 3. Hollow out the inside of the tomatoes using a spoon.
- 4. Remove the hard core from the white cabbage.
- 5. Cut the white cabbage into thin strips.
- 6. Peel the ginger.
- 7. Finely chop half of the ginger.
- 8. Slice the remaining half of the ginger into thin rounds.
- 9. Heat oil in a pan.
- 10. Sauté the cabbage strips in the hot oil.
- 11. Add the finely chopped ginger.
- 12. Deglaze the mixture with vegetable broth.
- 13. Simmer the filling for about two minutes until the vegetables are still crisp-tender.
- 14. Stir sesame oil into the filling.
- 15. Season the filling with soy sauce and cayenne pepper.
- 16. Fill the hollowed-out tomatoes with the warm mixture.
- 17. Place the tomato lids back on the stuffed tomatoes.
- 18. Place the tomatoes into bamboo steamers.
- 19. Place the ginger slices into the steamers as well.
- 20. Place the steamers over a wok with boiling water.
- 21. Steam the tomatoes for 10 to 15 minutes with the lid on.
- 22. Swap the steamers halfway through the cooking time if you are using two.
- 23. Sprinkle the finished tomatoes with fresh coriander.
- 24. Serve the dish immediately.
