  1. 1. Wash the tomatoes thoroughly.
  2. 2. Cut off the top lids of the tomatoes.
  3. 3. Hollow out the inside of the tomatoes using a spoon.
  4. 4. Remove the hard core from the white cabbage.
  5. 5. Cut the white cabbage into thin strips.
  6. 6. Peel the ginger.
  7. 7. Finely chop half of the ginger.
  8. 8. Slice the remaining half of the ginger into thin rounds.
  9. 9. Heat oil in a pan.
  10. 10. Sauté the cabbage strips in the hot oil.
  11. 11. Add the finely chopped ginger.
  12. 12. Deglaze the mixture with vegetable broth.
  13. 13. Simmer the filling for about two minutes until the vegetables are still crisp-tender.
  14. 14. Stir sesame oil into the filling.
  15. 15. Season the filling with soy sauce and cayenne pepper.
  16. 16. Fill the hollowed-out tomatoes with the warm mixture.
  17. 17. Place the tomato lids back on the stuffed tomatoes.
  18. 18. Place the tomatoes into bamboo steamers.
  19. 19. Place the ginger slices into the steamers as well.
  20. 20. Place the steamers over a wok with boiling water.
  21. 21. Steam the tomatoes for 10 to 15 minutes with the lid on.
  22. 22. Swap the steamers halfway through the cooking time if you are using two.
  23. 23. Sprinkle the finished tomatoes with fresh coriander.
  24. 24. Serve the dish immediately.
