🍽️ Aromatic Tomato Fish Soup

Ingredients
- 1 onion
- 1 garlic clove
- 1 bulb fennel
- 2 tbsp olive oil
- 400 g fish (e.g. monkfish, sea bream, salmon, trout, pollack, dragonfish)
- 250 g seafood (shrimp, mussels, calamari)
- 400 g chopped tomatoes (can)
- 200 ml dry white wine
- 300 ml fish stock
- salt
- pepper (from the mill)
- sweet paprika powder
Instructions
- 1. Peel the onion and garlic.
- 2. Finely chop the onion and garlic.
- 3. Wash and clean the fennel.
- 4. Remove the hard core from the fennel.
- 5. Cut the fennel into small cubes.
- 6. Heat oil in a pot.
- 7. Sweat the onion and garlic in the oil until translucent.
- 8. Add the fennel cubes.
- 9. Sauté the fennel briefly.
- 10. Stir in the tomatoes.
- 11. Pour in the wine.
- 12. Pour in the broth.
- 13. Season the soup with salt.
- 14. Season the soup with pepper.
- 15. Season the soup with paprika.
- 16. Simmer the soup over medium heat for about 15 minutes.
- 17. Wash the fish and seafood.
- 18. Clean the fish and seafood.
- 19. Cut the fish into large pieces.
- 20. Add the fish pieces and seafood to the soup.
- 21. Let the soup cook for 6-8 minutes until done.
- 22. Adjust the seasoning of the soup.
- 23. Serve the soup in small bowls.
