🍽️ Homemade Tomato Ketchup and Spicy Mango Chili Sauce

Ingredients
- 1 shallot
- 2 garlic cloves
- 2 tbsp oil
- 500 g tomatoes
- 1 tsp pepper
- 1 sprig parsley
- salt
- cayenne pepper
- 1 sprig basil
- 0.5 sprig rosemary
- 1 tsp sugar
- 1 shallot
- 1 tbsp oil
- 400 g tomatoes
- 150 g mango flesh
- 3 tbsp balsamic vinegar
- 0.5 tsp curry
- salt
- pepper
- 1 chili pepper
Instructions
- 1. Peel the shallot and the garlic.
- 2. Finely chop the shallot and the garlic.
- 3. Pour hot water over the tomatoes.
- 4. Remove the skin from the tomatoes.
- 5. Cut off the stem ends of the tomatoes.
- 6. Cut the tomato flesh into pieces.
- 7. Heat oil in a pan.
- 8. Sauté the shallots and garlic in the hot oil.
- 9. Sprinkle sugar over the onion mixture.
- 10. Add crushed pepper to the pan.
- 11. Add the tomato pieces to the pan.
- 12. Add basil, rosemary, and parsley to the pan.
- 13. Simmer the mixture, stirring occasionally, for about 10 minutes.
- 14. Remove the herbs from the pan.
- 15. Continue cooking the tomato mixture until it becomes thick.
- 16. Season the ketchup with salt and cayenne pepper.
- 17. Peel the shallot for the chili sauce.
- 18. Finely chop the shallot.
- 19. Cut the mango flesh into pieces.
- 20. Pour hot water over the tomatoes for the chili sauce.
- 21. Remove the skin from these tomatoes.
- 22. Cut off the stem ends from these tomatoes.
- 23. Cut the flesh of these tomatoes into pieces.
- 24. Heat oil in a clean pan.
- 25. Sauté the shallot in the hot oil.
- 26. Add the tomato pieces and mango to the pan.
- 27. Season the mixture with curry, salt, and pepper.
- 28. Simmer the mixture, stirring occasionally, for about 10 minutes.
- 29. Puree the cooked mixture.
- 30. Wash the chili.
- 31. Remove the stem and seeds from the chili.
- 32. Finely chop the chili.
- 33. Add the chopped chili to the tomato-mango mixture.
- 34. Continue cooking the sauce while stirring until it becomes thick.
- 35. Stir the vinegar into the chili sauce.
