🍽️ Tomato Bean Salad

Ingredients
- 300 g broad beans (fresh or frozen)
- 600 g cherry tomatoes
- 1 white onion
- 3 tbsp sprout oil
- 2 tbsp beef broth
- 1 tsp mustard
- 3 tbsp vinegar
- salt
- pepper (from the mill)
- 1 pinch sugar
- 2 tsp chopped thyme leaves
- 100 g olives
Instructions
- 1. Blanch (thawed) broad beans and spring onions in boiling salted water for about 5 minutes, then drain and let drip dry.
- 2. Wash the tomatoes thoroughly, remove the cores, and halve them.
- 3. Peel the onion and cut it into fine cubes.
- 4. Mix the broth, mustard, vinegar, a pinch of salt, plenty of pepper, and sugar well, then stir in the oil.
- 5. Combine the salad dressing with the beans, onions, olives, and tomatoes, adjust to taste, and let it sit covered for approx. 30 minutes; sprinkle with thyme before serving.
