  1. 1. Blanch (thawed) broad beans and spring onions in boiling salted water for about 5 minutes, then drain and let drip dry.
  2. 2. Wash the tomatoes thoroughly, remove the cores, and halve them.
  3. 3. Peel the onion and cut it into fine cubes.
  4. 4. Mix the broth, mustard, vinegar, a pinch of salt, plenty of pepper, and sugar well, then stir in the oil.
  5. 5. Combine the salad dressing with the beans, onions, olives, and tomatoes, adjust to taste, and let it sit covered for approx. 30 minutes; sprinkle with thyme before serving.
