🍽️ Crispy Tomato Puff Pastry Bites

Ingredients
- 350 g puff pastry
- flour (for the work surface)
- 2 garlic cloves
- 4 thyme sprigs
- 12 anchovies (pickled in oil)
- 200 g cream cheese
- 1 egg
- 60 g grated parmesan
- salt
- 1 drop lemon juice
- pepper (from the mill)
- 3 tomatoes
- 1 tbsp olive oil
Instructions
- 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
- 2. Lightly dust a work surface with flour. Roll out the puff pastry to a thickness of about 3 to 4 millimeters.
- 3. Cut the dough into 8 by 8 centimeter squares.
- 4. Place the pastry pieces on a baking sheet lined with baking paper.
- 5. Peel the garlic and press it through a garlic press.
- 6. Wash the thyme sprigs and shake them dry.
- 7. Pluck the thyme leaves finely from the stems.
- 8. Let the anchovies drain on kitchen paper.
- 9. Then finely chop the anchovies.
- 10. Put the cream cheese into a bowl.
- 11. Add half of the finely plucked thyme leaves.
- 12. Add the egg.
- 13. Take half of the grated Parmesan cheese.
- 14. Stir everything until smooth and creamy.
- 15. Season the mixture with salt, lemon juice, and pepper to taste.
- 16. Spread the cream cheese mixture evenly over the pastry pieces.
- 17. Wash the tomatoes thoroughly.
- 18. Cut out the hard stem area from the tomatoes.
- 19. Slice the tomatoes into even slices.
- 20. Place one tomato slice on each pastry square spread with cheese.
- 21. Distribute the chopped anchovies over the tomato slices.
- 22. Sprinkle the pressed garlic over the snacks.
- 23. Add the remaining grated Parmesan cheese.
- 24. Sprinkle everything with the remaining thyme leaves.
- 25. Drizzle a little olive oil over the topped pastry pieces.
- 26. Put the tray into the oven.
- 27. Bake the snacks for about 25 minutes until golden brown.
- 28. Take the puff pastry slices out of the oven.
- 29. Arrange them on a serving platter.
- 30. Serve the snacks hot or lukewarm.
