  1. 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
  2. 2. Lightly dust a work surface with flour. Roll out the puff pastry to a thickness of about 3 to 4 millimeters.
  3. 3. Cut the dough into 8 by 8 centimeter squares.
  4. 4. Place the pastry pieces on a baking sheet lined with baking paper.
  5. 5. Peel the garlic and press it through a garlic press.
  6. 6. Wash the thyme sprigs and shake them dry.
  7. 7. Pluck the thyme leaves finely from the stems.
  8. 8. Let the anchovies drain on kitchen paper.
  9. 9. Then finely chop the anchovies.
  10. 10. Put the cream cheese into a bowl.
  11. 11. Add half of the finely plucked thyme leaves.
  12. 12. Add the egg.
  13. 13. Take half of the grated Parmesan cheese.
  14. 14. Stir everything until smooth and creamy.
  15. 15. Season the mixture with salt, lemon juice, and pepper to taste.
  16. 16. Spread the cream cheese mixture evenly over the pastry pieces.
  17. 17. Wash the tomatoes thoroughly.
  18. 18. Cut out the hard stem area from the tomatoes.
  19. 19. Slice the tomatoes into even slices.
  20. 20. Place one tomato slice on each pastry square spread with cheese.
  21. 21. Distribute the chopped anchovies over the tomato slices.
  22. 22. Sprinkle the pressed garlic over the snacks.
  23. 23. Add the remaining grated Parmesan cheese.
  24. 24. Sprinkle everything with the remaining thyme leaves.
  25. 25. Drizzle a little olive oil over the topped pastry pieces.
  26. 26. Put the tray into the oven.
  27. 27. Bake the snacks for about 25 minutes until golden brown.
  28. 28. Take the puff pastry slices out of the oven.
  29. 29. Arrange them on a serving platter.
  30. 30. Serve the snacks hot or lukewarm.
