🍳 Fresh Tomato Basil Spread

Ingredients
- 1 clove garlic and shallots each
- 1 bunch basil
- 2 tbsp olive oil
- 50 g chunky tomatoes
- 2 tbsp tomato paste
- 150 g mascarpone
- salt, pepper
- 1 pinch sugar
- basil (for garnish)
Instructions
- 1. Peel the shallot and the garlic.
- 2. Dice the shallot and the garlic into small cubes.
- 3. Rinse the fresh basil under cold water.
- 4. Shake the basil dry.
- 5. Carefully pluck the basil leaves from the stems.
- 6. Finely chop the basil leaves.
- 7. Put the olive oil, chunky tomatoes, tomato paste, mascarpone, shallots, garlic, and basil into a blender.
- 8. Blend the ingredients until smooth.
- 9. Season the spread with salt, pepper, and a pinch of sugar.
- 10. Garnish the top of the spread with some fresh basil.
- 11. Serve the spread on fresh bread.
