  1. 1. Peel the avocado, cut it in half, remove the pit, and dice the halves into small cubes. Drizzle with lemon juice immediately.
  2. 2. Briefly blanch the tomatoes, cool them down, peel off the skin, quarter, remove the seeds, and dice them into small pieces.
  3. 3. Add the diced tomatoes to the avocado cubes, season with salt and pepper, and mix everything well.
  4. 4. Thoroughly wash the lettuce, shake off excess water, and tear it into smaller pieces if necessary.
  5. 5. Mix vinegar with mustard, sugar, salt, and pepper, then whisk in the oil.
  6. 6. To serve, arrange the lettuce leaves on plates and drizzle with the dressing. Place half of the avocado-tomato mixture into a cup or glass and invert it onto the lettuce leaves. Garnish with chervil and serve.
