🍽️ Tomato-Avocado Salad

Ingredients
- 1 ripe avocado
- 2 tbsp lemon juice
- 3 tomatoes
- 4 nice head lettuce leaves
- 1 tbsp white wine vinegar
- 1 tsp balsamic vinegar
- 0.5 tsp mustard
- 1 pinch sugar
- salt
- pepper (from the mill)
- 2 tbsp olive oil
- 2 chervil sprigs (for garnish)
Instructions
- 1. Peel the avocado, cut it in half, remove the pit, and dice the halves into small cubes. Drizzle with lemon juice immediately.
- 2. Briefly blanch the tomatoes, cool them down, peel off the skin, quarter, remove the seeds, and dice them into small pieces.
- 3. Add the diced tomatoes to the avocado cubes, season with salt and pepper, and mix everything well.
- 4. Thoroughly wash the lettuce, shake off excess water, and tear it into smaller pieces if necessary.
- 5. Mix vinegar with mustard, sugar, salt, and pepper, then whisk in the oil.
- 6. To serve, arrange the lettuce leaves on plates and drizzle with the dressing. Place half of the avocado-tomato mixture into a cup or glass and invert it onto the lettuce leaves. Garnish with chervil and serve.
