🥤 Refreshing Tomato-Apricot splash

Ingredients
- 600 ml tomato juice
- 2 bay leaves
- salt
- pepper
- cayenne pepper
- 1 lemon
- 4 sprigs basil
- 4 apricots
- 350 ml cold sparkling mineral water
- ice cubes
Instructions
- 1. Pour the tomato juice into a pot.
- 2. Add bay leaves, a pinch of salt, pepper, and cayenne pepper.
- 3. Squeeze the lemon and add the juice to the mixture.
- 4. Warm the mixture slowly until it starts to bubble gently.
- 5. Let it simmer for 5 minutes over medium heat.
- 6. Remove the pot from the heat and let the liquid cool down briefly.
- 7. Place the bowl in the refrigerator for 1 hour.
- 8. Wash the basil thoroughly and shake it dry.
- 9. Pluck the leaves off the stems.
- 10. Set aside 4 nice leaves for decoration.
- 11. Cut the rest of the basil into thin strips.
- 12. Wash the apricots and pat them dry.
- 13. Halve the apricots and remove the pits.
- 14. Slice the apricot halves into thin slices.
- 15. Remove the bay leaves from the cooled tomato liquid.
- 16. Put half of the apricot slices together with the liquid into a blender.
- 17. Blend the mixture until smooth.
- 18. Distribute the puree evenly among 4 glasses.
- 19. Top up the glasses with sparkling water.
- 20. Add a few ice cubes to each glass.
- 21. Add the remaining apricot slices to the drinks.
- 22. Garnish each drink with the reserved basil leaves.
- 23. Enjoy the fresher immediately.
