  1. 1. Pour the tomato juice into a pot.
  2. 2. Add bay leaves, a pinch of salt, pepper, and cayenne pepper.
  3. 3. Squeeze the lemon and add the juice to the mixture.
  4. 4. Warm the mixture slowly until it starts to bubble gently.
  5. 5. Let it simmer for 5 minutes over medium heat.
  6. 6. Remove the pot from the heat and let the liquid cool down briefly.
  7. 7. Place the bowl in the refrigerator for 1 hour.
  8. 8. Wash the basil thoroughly and shake it dry.
  9. 9. Pluck the leaves off the stems.
  10. 10. Set aside 4 nice leaves for decoration.
  11. 11. Cut the rest of the basil into thin strips.
  12. 12. Wash the apricots and pat them dry.
  13. 13. Halve the apricots and remove the pits.
  14. 14. Slice the apricot halves into thin slices.
  15. 15. Remove the bay leaves from the cooled tomato liquid.
  16. 16. Put half of the apricot slices together with the liquid into a blender.
  17. 17. Blend the mixture until smooth.
  18. 18. Distribute the puree evenly among 4 glasses.
  19. 19. Top up the glasses with sparkling water.
  20. 20. Add a few ice cubes to each glass.
  21. 21. Add the remaining apricot slices to the drinks.
  22. 22. Garnish each drink with the reserved basil leaves.
  23. 23. Enjoy the fresher immediately.
