  2. 2. Remove any wilted or damaged leaves from the salad.
  3. 3. Spin the salad dry, for example in a salad spinner.
  4. 4. Tear the salad leaves into bite-sized pieces.
  5. 5. Rinse the tomato under running water.
  6. 6. Slice the tomato into even slices.
  7. 7. Peel the orange using a sharp knife.
  8. 8. Remove the white pith and bitter layer underneath completely.
  9. 9. Slice the peeled orange crosswise into thin slices.
  10. 10. Catch the released orange juice in a small bowl.
  11. 11. Let the mozzarella drain well.
  12. 12. Slice the mozzarella.
  13. 13. Arrange the mozzarella, tomato, and orange slices in an overlapping shingle pattern on two plates.
  14. 14. Distribute the prepared salad over the slices.
  15. 15. Whisk the oil with the vinegar, salt, and pepper in a small bowl.
  16. 16. Drizzle the dressing mixture over the finished salad.
