🍽️ Tofu towers with mango and avocado

Ingredients
- 200 g floury potatoes
- salt
- 1 mango
- 50 ml orange juice
- 1 tsp cornstarch
- 500 g tofu
- salt
- pepper (from a grinder)
- 2 tbsp butter
- 1 avocado
- 1 red chili pepper
- 2 tbsp milk
- 1 unpeeled orange
- 20 ml orange liqueur
- fresh herbs for garnish (e.g. chervil, shiso, dill)
Instructions
- 1. Peel the potatoes.
- 2. Place the peeled potatoes in salted water.
- 3. Cook the potatoes for about 30 minutes until tender.
- 4. Peel the mango.
- 5. Cut the flesh away from the pit.
- 6. Puree the mango flesh until smooth.
- 7. Pour the orange juice over the mango puree.
- 8. Bring the mixture to a boil.
- 9. Mix the starch with a little cold water.
- 10. Stir the starch mixture into the mango mixture.
- 11. Let the sauce thicken.
- 12. Remove the mango sauce from the heat.
- 13. Cut the tofu into slices about 1 cm thick.
- 14. Cut out 8 circles with a diameter of 5 to 6 cm from the tofu.
- 15. Season the tofu circles with salt and pepper.
- 16. Heat butter in a pan.
- 17. Fry the tofu circles slowly in the hot butter.
- 18. Fry them for about 5 minutes on each side until golden brown.
- 19. Peel the avocado.
- 20. Halve the avocado.
- 21. Remove the pits from the avocado halves.
- 22. Mash the avocado flesh with a fork.
- 23. Drain the cooked potatoes.
- 24. Press the potatoes through a potato ricer.
- 25. Fold the mashed avocado into the mashed potatoes.
- 26. Wash the chili pepper.
- 27. Remove the stem and seeds of the chili pepper.
- 28. Cut the chili pepper into thin rings.
- 29. Fold the chili rings into the potato-avocado mash.
- 30. Add a little hot milk if the mash is too thick.
- 31. Season the mash with salt.
- 32. Peel the orange to get the zest.
- 33. Squeeze the juice from the orange.
- 34. Add the orange zest and juice to the fried tofu.
- 35. Toss the tofu briefly in the sauce.
- 36. Take cooking rings for the towers.
- 37. Place a tofu circle in the ring on the plate.
- 38. Spread the potato-avocado mash over the tofu circle.
- 39. Spread the mango cream over the mash.
- 40. Place another tofu slice on top to finish.
- 41. Drizzle the orange sauce around the tower.
- 42. Carefully remove the cooking ring.
- 43. Garnish the dish with fresh herbs.
- 44. Serve the tofu towers.
