  5. 5. Cut the flesh away from the pit.
  6. 6. Puree the mango flesh until smooth.
  7. 7. Pour the orange juice over the mango puree.
  8. 8. Bring the mixture to a boil.
  9. 9. Mix the starch with a little cold water.
  10. 10. Stir the starch mixture into the mango mixture.
  11. 11. Let the sauce thicken.
  12. 12. Remove the mango sauce from the heat.
  13. 13. Cut the tofu into slices about 1 cm thick.
  14. 14. Cut out 8 circles with a diameter of 5 to 6 cm from the tofu.
  15. 15. Season the tofu circles with salt and pepper.
  16. 16. Heat butter in a pan.
  17. 17. Fry the tofu circles slowly in the hot butter.
  18. 18. Fry them for about 5 minutes on each side until golden brown.
  19. 19. Peel the avocado.
  20. 20. Halve the avocado.
  21. 21. Remove the pits from the avocado halves.
  22. 22. Mash the avocado flesh with a fork.
  23. 23. Drain the cooked potatoes.
  24. 24. Press the potatoes through a potato ricer.
  25. 25. Fold the mashed avocado into the mashed potatoes.
  26. 26. Wash the chili pepper.
  27. 27. Remove the stem and seeds of the chili pepper.
  28. 28. Cut the chili pepper into thin rings.
  29. 29. Fold the chili rings into the potato-avocado mash.
  30. 30. Add a little hot milk if the mash is too thick.
  31. 31. Season the mash with salt.
  32. 32. Peel the orange to get the zest.
  33. 33. Squeeze the juice from the orange.
  34. 34. Add the orange zest and juice to the fried tofu.
  35. 35. Toss the tofu briefly in the sauce.
  36. 36. Take cooking rings for the towers.
  37. 37. Place a tofu circle in the ring on the plate.
  38. 38. Spread the potato-avocado mash over the tofu circle.
  39. 39. Spread the mango cream over the mash.
  40. 40. Place another tofu slice on top to finish.
  41. 41. Drizzle the orange sauce around the tower.
  42. 42. Carefully remove the cooking ring.
  43. 43. Garnish the dish with fresh herbs.
  44. 44. Serve the tofu towers.
