🍰 Tofu Chocolate Mousse – Smarter

Ingredients
- 100 g dark chocolate (at least 70% cocoa)
- 1 small organic orange
- 1 vanilla pod
- 80 g coconut blossom sugar
- 700 g silken tofu
- 40 g cocoa powder
- 3 tbsp cooled espresso
- 2 egg whites
- salt
Instructions
- 1. Roughly chop the chocolate.
- 2. Melt the chocolate pieces in a bowl over a hot, but not boiling, water bath.
- 3. Rinse the orange with hot water and dry it.
- 4. Finely grate the orange peel.
- 5. Use the orange for something else.
- 6. Split the vanilla pod in half lengthwise.
- 7. Scrape out the vanilla seeds.
- 8. Mix the vanilla seeds with the coconut blossom sugar.
- 9. Add the tofu, cocoa powder, orange peel, vanilla sugar, and espresso to a bowl.
- 10. Beat the mixture until creamy using the beaters of a hand mixer or in a food processor.
- 11. Pour the melted chocolate into the tofu mixture.
- 12. Stir the chocolate smoothly into the mixture.
- 13. Separate the eggs.
- 14. Use the egg yolks for something else.
- 15. Add a pinch of salt to the egg whites.
- 16. Whip the egg whites until stiff using the beaters of a hand mixer.
- 17. Gently fold the egg whites into the tofu mixture.
- 18. Fill the mousse into glasses.
- 19. Chill the glasses for 2 hours.
