  1. 1. Roughly chop the chocolate.
  2. 2. Melt the chocolate pieces in a bowl over a hot, but not boiling, water bath.
  3. 3. Rinse the orange with hot water and dry it.
  4. 4. Finely grate the orange peel.
  5. 5. Use the orange for something else.
  6. 6. Split the vanilla pod in half lengthwise.
  7. 7. Scrape out the vanilla seeds.
  8. 8. Mix the vanilla seeds with the coconut blossom sugar.
  9. 9. Add the tofu, cocoa powder, orange peel, vanilla sugar, and espresso to a bowl.
  10. 10. Beat the mixture until creamy using the beaters of a hand mixer or in a food processor.
  11. 11. Pour the melted chocolate into the tofu mixture.
  12. 12. Stir the chocolate smoothly into the mixture.
  13. 13. Separate the eggs.
  14. 14. Use the egg yolks for something else.
  15. 15. Add a pinch of salt to the egg whites.
  16. 16. Whip the egg whites until stiff using the beaters of a hand mixer.
  17. 17. Gently fold the egg whites into the tofu mixture.
  18. 18. Fill the mousse into glasses.
  19. 19. Chill the glasses for 2 hours.
