🍽️ Crispy Tofu Rice Patties

Ingredients
- 300 g cauliflower florets
- 1 onion
- 1 clove garlic
- 3 tbsp oil
- 120 g cooked brown rice
- 400 ml vegetable broth
- salt
- pepper
- 150 g tofu (firm)
- 2 eggs
- 2 tbsp whole wheat breadcrumbs
- 2 tbsp soy sauce (light)
- 8 tbsp breadcrumbs
- parsley
Instructions
- 1. Wash the cauliflower florets under running water.
- 2. Peel the onion and the garlic clove.
- 3. Finely chop the onion and garlic.
- 4. Heat some oil in a pan.
- 5. Sauté the onion and garlic mixture briefly.
- 6. Add the rice and cauliflower to the pan.
- 7. Pour the broth over the mixture.
- 8. Let everything simmer on low heat for about 15 minutes.
- 9. Add the tofu to the pan.
- 10. Puree the entire mixture with a blender or hand blender.
- 11. Season the mixture to your liking.
- 12. Let the mixture cool down completely.
- 13. Add the egg to the cooled mixture.
- 14. Add the breadcrumbs.
- 15. Mix everything thoroughly.
- 16. Adjust the seasoning with soy sauce, salt, and pepper.
- 17. Shape 16 small patties from the mixture.
- 18. Roll the patties in sesame seeds.
- 19. Heat the remaining oil in a non-stick pan.
- 20. Fry the patties for about 5 minutes on each side until golden brown.
- 21. Serve the patties garnished with parsley.
