🍽️ Crispy Tofu Patties with Sautéed Zucchini and Fennel

Ingredients
- 3 garlic cloves
- 1 handful cilantro leaves
- 440 g tofu
- 2 eggs
- 80 g whole wheat flour
- salt
- 2 knife tip ras el-hanout
- 1 tsp sweet paprika powder
- 1 tsp cumin (ground)
- 1 tsp coriander (ground)
- 1 large zucchini
- 1 bulb fennel
- 200 g mushrooms
- 6 cherry tomatoes
- 4 tbsp olive oil
- pepper (from the mill)
- 4 tbsp pesto
- flat-leaf parsley (for garnish)
Instructions
- 1. Peel the garlic clove and chop it into very small pieces.
- 2. Wash the fresh cilantro thoroughly and let it drain well.
- 3. Cut the cilantro leaves into fine strips.
- 4. Mash the tofu into a crumbly texture using a fork or a food processor.
- 5. Mix the mashed tofu with the chopped garlic, cilantro leaves, and the remaining ingredients for the patties.
- 6. Shape the mixture into four equal-sized patties.
- 7. Wash the zucchini thoroughly and trim off the ends.
- 8. Slice the zucchini into eight even rounds of about five millimeters thick.
- 9. Wash the fennel, remove the tough cores, and cut it in half.
- 10. Cut the halved fennel into thin strips.
- 11. Clean the mushrooms, meaning remove dirt and stems if necessary.
- 12. Wash the cherry tomatoes and cut each one into four quarters.
- 13. Heat two tablespoons of olive oil in a large frying pan.
- 14. Fry the tofu patties on all sides until golden brown.
- 15. Remove the finished patties from the pan and keep them warm.
- 16. Heat the remaining olive oil in the same pan.
- 17. Add the zucchini slices, mushrooms, and fennel to the pan.
- 18. Sauté the vegetables, turning occasionally, for six to eight minutes.
- 19. Season the vegetables with salt and pepper to taste.
- 20. Place the tofu patties on the serving plates.
- 21. Layer the sautéed zucchini, mushrooms, and fennel on top of the patties.
- 22. Place the cherry tomato quarters next to the patties.
- 23. Drizzle some pesto over the dish.
- 24. Garnish everything with fresh parsley.
