  1. 1. Peel the garlic clove and chop it into very small pieces.
  2. 2. Wash the fresh cilantro thoroughly and let it drain well.
  3. 3. Cut the cilantro leaves into fine strips.
  4. 4. Mash the tofu into a crumbly texture using a fork or a food processor.
  5. 5. Mix the mashed tofu with the chopped garlic, cilantro leaves, and the remaining ingredients for the patties.
  6. 6. Shape the mixture into four equal-sized patties.
  7. 7. Wash the zucchini thoroughly and trim off the ends.
  8. 8. Slice the zucchini into eight even rounds of about five millimeters thick.
  9. 9. Wash the fennel, remove the tough cores, and cut it in half.
  10. 10. Cut the halved fennel into thin strips.
  11. 11. Clean the mushrooms, meaning remove dirt and stems if necessary.
  12. 12. Wash the cherry tomatoes and cut each one into four quarters.
  13. 13. Heat two tablespoons of olive oil in a large frying pan.
  14. 14. Fry the tofu patties on all sides until golden brown.
  15. 15. Remove the finished patties from the pan and keep them warm.
  16. 16. Heat the remaining olive oil in the same pan.
  17. 17. Add the zucchini slices, mushrooms, and fennel to the pan.
  18. 18. Sauté the vegetables, turning occasionally, for six to eight minutes.
  19. 19. Season the vegetables with salt and pepper to taste.
  20. 20. Place the tofu patties on the serving plates.
  21. 21. Layer the sautéed zucchini, mushrooms, and fennel on top of the patties.
  22. 22. Place the cherry tomato quarters next to the patties.
  23. 23. Drizzle some pesto over the dish.
  24. 24. Garnish everything with fresh parsley.
