🍽️ Crispy Tofu Burger with Pumpkin

Ingredients
- 200 g pumpkin (1 piece; e.g. yellow centner)
- 2 spring onions
- 1 garlic clove
- 1.5 tbsp olive oil
- 2 tbsp maple syrup
- 1 tbsp white wine vinegar
- 1 small dried chili pepper
- salt
- pepper
- 20 g ginger (1 piece)
- 2 tbsp yogurt salad cream
- 1 small tomato
- 2 large lettuce leaves (e.g. Lollo bionda)
- 2 whole wheat hamburger buns
- 250 g tofu
- 2 tsp sesame
Instructions
- 1. Peel the pumpkin and remove the seeds.
- 2. Cut the pumpkin flesh into small cubes of about five millimeters.
- 3. Wash the spring onions and chop them finely.
- 4. Peel the garlic clove and chop it finely.
- 5. Heat one tablespoon of oil in a pan.
- 6. Sauté the spring onions and garlic for three minutes until translucent.
- 7. Add the maple syrup to the pan.
- 8. Stir in the vinegar immediately.
- 9. Add the pumpkin cubes to the pan.
- 10. Crumble the chili pepper into the pan.
- 11. Add a little water.
- 12. Cover the pan and cook the pumpkin over medium heat for about twelve minutes until slightly al dente.
- 13. If necessary, add a little more water during cooking.
- 14. Season the pumpkin compote with salt and pepper.
- 15. Set the pan aside.
- 16. Peel the ginger.
- 17. Grate the ginger finely.
- 18. Mix the grated ginger with the salad cream.
- 19. Wash the tomato.
- 20. Dry the tomato.
- 21. Cut out the stem area of the tomato in a wedge shape.
- 22. Slice the tomato.
- 23. Wash the salad leaves.
- 24. Shake the salad leaves dry.
- 25. Halve the burger buns.
- 26. Lightly brown the bun halves in a toaster or under the hot oven grill.
- 27. Slice the tofu into one-centimeter thick slices.
- 28. Lightly oil a grill pan.
- 29. Grill the tofu slices in the pan for one to two minutes on each side.
- 30. Place the salad on the bottom halves of the buns.
- 31. Place the tomato slices on top.
- 32. Add the pumpkin compote.
- 33. Add the ginger cream.
- 34. Place the grilled tofu slices on the toppings.
- 35. Cover the burgers with the top halves of the buns.
- 36. Sprinkle sesame seeds over the burgers.
- 37. Serve the burgers.
