  2. 2. Cut the pumpkin flesh into small cubes of about five millimeters.
  3. 3. Wash the spring onions and chop them finely.
  4. 4. Peel the garlic clove and chop it finely.
  5. 5. Heat one tablespoon of oil in a pan.
  6. 6. Sauté the spring onions and garlic for three minutes until translucent.
  7. 7. Add the maple syrup to the pan.
  8. 8. Stir in the vinegar immediately.
  9. 9. Add the pumpkin cubes to the pan.
  10. 10. Crumble the chili pepper into the pan.
  11. 11. Add a little water.
  12. 12. Cover the pan and cook the pumpkin over medium heat for about twelve minutes until slightly al dente.
  13. 13. If necessary, add a little more water during cooking.
  14. 14. Season the pumpkin compote with salt and pepper.

  17. 17. Grate the ginger finely.

  21. 21. Cut out the stem area of the tomato in a wedge shape.

  24. 24. Shake the salad leaves dry.
  25. 25. Halve the burger buns.
  26. 26. Lightly brown the bun halves in a toaster or under the hot oven grill.
  27. 27. Slice the tofu into one-centimeter thick slices.
  28. 28. Lightly oil a grill pan.
  29. 29. Grill the tofu slices in the pan for one to two minutes on each side.
  30. 30. Place the salad on the bottom halves of the buns.
  31. 31. Place the tomato slices on top.
  32. 32. Add the pumpkin compote.
  33. 33. Add the ginger cream.
  34. 34. Place the grilled tofu slices on the toppings.
  35. 35. Cover the burgers with the top halves of the buns.
  36. 36. Sprinkle sesame seeds over the burgers.
