  1. 1. Place the tofu between two clean kitchen towels.
  2. 2. Press down lightly on the tofu to squeeze out excess liquid.
  3. 3. Peel the onion and garlic.
  4. 4. Finely chop the onion and garlic.
  5. 5. Wash the bell pepper and remove the inside including the seeds.
  6. 6. Peel the carrots and celeriac.
  7. 7. Clean the root vegetables.
  8. 8. Cut all the vegetables into cubes of about 1 cm.
  9. 9. Crumble the tofu finely using a fork or your hands.
  10. 10. Heat 2 tablespoons of oil in a large pot.
  11. 11. Fry the tofu over high heat for about 5 minutes.
  12. 12. Remove the tofu from the pot and place it in a bowl.
  13. 13. Add the chopped onion and garlic to the pot.
  14. 14. Add 1 tablespoon of olive oil.
  15. 15. Sauté the vegetables over medium heat until translucent.
  16. 16. Add the diced bell pepper, carrots, and celeriac to the pot.
  17. 17. Fry the vegetables for 5 minutes.
  18. 18. Stir in the tomato paste.
  19. 19. Reduce the heat.
  20. 20. Continue frying the mixture for 1 minute.
  21. 21. Season with salt, pepper, paprika powder, cinnamon, and Italian herbs.
  22. 22. Deglaze the sauce with puréed tomatoes and vegetable broth.
  23. 23. Bring the sauce to a boil once.
  24. 24. Simmer the sauce for 15 minutes over low heat.
  25. 25. Stir occasionally.
  26. 26. Cook the whole wheat spaghetti in boiling salted water according to package instructions.
  27. 27. Cook the pasta for about 12 minutes until al dente.
  28. 28. Return the tofu to the bolognese.
  29. 29. Add the dark chocolate.
  30. 30. Mix everything well together.
  31. 31. Plate the spaghetti.
  32. 32. Top the pasta with the tofu bolognese.
  33. 33. Sprinkle nutritional yeast over it.
  34. 34. Wash the basil.
  35. 35. Shake the basil dry.
  36. 36. Chop the basil roughly.
  37. 37. Distribute the basil over the tofu bolognese.
