🍽️ Tofu Bolognese

Ingredients
- 400 g Smoked tofu
- 1 Onion (80 g each)
- 2 Garlic cloves
- 1 Bell pepper (200 g each)
- 2 Carrots (100 g each)
- 0.5 Celeriac (250 g)
- 4 tbsp Olive oil
- 2 tbsp Tomato paste (15 g each)
- Salt
- Pepper
- 1 tsp Sweet paprika powder
- 0.25 tsp Cinnamon
- 2 tsp Dried Italian herbs (e.g. oregano, basil, thyme)
- 500 ml Passata
- 200 ml Vegetable broth
- 400 g Whole wheat spaghetti
- 3 pieces Dark chocolate (5 g each)
- 4 tsp Nutritional yeast flakes
- 1 handful Basil leaves
Instructions
- 1. Place the tofu between two clean kitchen towels.
- 2. Press down lightly on the tofu to squeeze out excess liquid.
- 3. Peel the onion and garlic.
- 4. Finely chop the onion and garlic.
- 5. Wash the bell pepper and remove the inside including the seeds.
- 6. Peel the carrots and celeriac.
- 7. Clean the root vegetables.
- 8. Cut all the vegetables into cubes of about 1 cm.
- 9. Crumble the tofu finely using a fork or your hands.
- 10. Heat 2 tablespoons of oil in a large pot.
- 11. Fry the tofu over high heat for about 5 minutes.
- 12. Remove the tofu from the pot and place it in a bowl.
- 13. Add the chopped onion and garlic to the pot.
- 14. Add 1 tablespoon of olive oil.
- 15. Sauté the vegetables over medium heat until translucent.
- 16. Add the diced bell pepper, carrots, and celeriac to the pot.
- 17. Fry the vegetables for 5 minutes.
- 18. Stir in the tomato paste.
- 19. Reduce the heat.
- 20. Continue frying the mixture for 1 minute.
- 21. Season with salt, pepper, paprika powder, cinnamon, and Italian herbs.
- 22. Deglaze the sauce with puréed tomatoes and vegetable broth.
- 23. Bring the sauce to a boil once.
- 24. Simmer the sauce for 15 minutes over low heat.
- 25. Stir occasionally.
- 26. Cook the whole wheat spaghetti in boiling salted water according to package instructions.
- 27. Cook the pasta for about 12 minutes until al dente.
- 28. Return the tofu to the bolognese.
- 29. Add the dark chocolate.
- 30. Mix everything well together.
- 31. Plate the spaghetti.
- 32. Top the pasta with the tofu bolognese.
- 33. Sprinkle nutritional yeast over it.
- 34. Wash the basil.
- 35. Shake the basil dry.
- 36. Chop the basil roughly.
- 37. Distribute the basil over the tofu bolognese.
