🍰 Homemade Toffee

Ingredients
- 300 g raw cane sugar
- 40 g honey
- 5 tbsp water
- 100 g whipping cream
- 50 g dark bittersweet chocolate (cocoa content at least 70 %)
Instructions
- 1. Put sugar, honey, and water into a pot.
- 2. Heat the mixture over medium heat.
- 3. Stir constantly until it starts bubbling.
- 4. Let it boil for 2 to 3 minutes.
- 5. Pour the cream into a large pot.
- 6. Bring the cream to a boil.
- 7. Melt the chocolate in the hot cream.
- 8. Add the previously boiled caramel sugar.
- 9. Stir well to combine everything.
- 10. Cook the mixture for about 15 to 20 minutes.
- 11. Cook until the mixture turns brown.
- 12. Drop a little bit of the mixture onto a cold plate.
- 13. Check if the drops harden.
- 14. If they are firm, the mixture is ready.
- 15. Line a rectangular pan with baking paper.
- 16. Lightly grease the pan if necessary.
- 17. Pour the caramel mixture into the pan.
- 18. Let the mixture cool down.
- 19. Turn the cooled mixture out onto a large board.
- 20. Peel off the baking paper.
- 21. Grease a knife.
- 22. Cut the mixture into squares.
- 23. Let the candies cool completely.
