  4. 4. Let the spinach wilt down.
  5. 5. Drain the spinach through a sieve.
  6. 6. Squeeze the liquid out of the spinach.
  7. 7. Finely chop the spinach.
  8. 8. Toast the bread slices.
  9. 9. Cut half of the toast slices diagonally into triangles.
  10. 10. Heat oil in a pan.
  11. 11. Finely dice the shallot.
  12. 12. Sauté the shallot in the oil until translucent.
  13. 13. Press the garlic into the pan.
  14. 14. Add the chopped spinach.
  15. 15. Simmer the mixture for about 5 minutes.
  16. 16. Season with salt and pepper.
  17. 17. Stir the feta cheese into the spinach mixture.
  18. 18. Grease a baking dish.
  19. 19. Place the whole toast slices in the dish.
  20. 20. Spread the spinach mixture over the toast slices.
  21. 21. Arrange the toast triangles on top.
  22. 22. Crack the eggs.
  23. 23. Add the cream.

  25. 25. Grate the lemon zest.
  26. 26. Whisk everything into a liquid.
  27. 27. Pour the egg-cream mixture over the bread.
