  1. 1. Preheat your grill to the desired temperature.
  2. 2. Wash the arugula thoroughly.
  3. 3. Remove any thick stems or wilted leaves from the arugula.
  4. 4. Dry the arugula, for example in a salad spinner.
  5. 5. Rinse the salmon under running water.
  6. 6. Pat the salmon dry with kitchen paper.
  7. 7. Cut the salmon into slices about 1 centimeter thick.
  8. 8. Season the salmon slices with salt and pepper.
  9. 9. Drizzle some lemon juice over the salmon.
  10. 10. Place the salmon on the hot grill.
  11. 11. Cook the salmon until golden brown on each side.
  12. 12. Remove the salmon from the grill.
  13. 13. Set the grilled salmon aside until you need it.
  14. 14. Cut the cheese into thin slices.
  15. 15. Take 8 slices of baguette.
  16. 16. Top each baguette slice with one slice of cheese.
  17. 17. Place a slice of grilled salmon on top of the cheese.
  18. 18. Add some arugula on top of the salmon.
  19. 19. Take the remaining baguette slices.
  20. 20. Spread the remaining slices thinly with mustard.
  21. 21. Place the mustard side down as a lid on the filled slices.
  22. 22. Tie each sandwich together with kitchen twine.
  23. 23. Place the sandwiches on the hot grill.
  24. 24. Toast the sandwiches until golden brown.
  25. 25. Turn the sandwiches occasionally so they brown evenly.
  26. 26. Place the finished sandwiches on plates.
  27. 27. Serve the sandwiches immediately.
