🍽️ Spicy Pastrami Toast with Homemade Tomato Relish

Ingredients
- 800 g green tomatoes
- 2 onions
- 1 garlic clove
- 2 cm fresh ginger
- 1 green chili pepper
- 1 pinch ground coriander
- 80 ml fruit vinegar
- 100 g sugar
- 120 ml orange juice
- 1 pinch salt
- 50 g mixed herbs (e.g. parsley, chervil, thyme, dill)
- 1 lettuce heart
- 3 tomatoes
- 8 slices toast bread
- 300 g pastrami
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Shock the tomatoes immediately with cold water.
- 3. Peel the skin off the tomatoes.
- 4. Cut the tomatoes into quarters.
- 5. Break the tomato quarters into coarse chunks.
- 6. Peel the onion.
- 7. Peel the garlic.
- 8. Peel the ginger.
- 9. Dice the onion, garlic, and ginger into small cubes.
- 10. Wash the chili pepper.
- 11. Cut the chili in half lengthwise.
- 12. Slice the chili halves into thin rings.
- 13. Mix the diced onion, garlic, and ginger with the chili rings.
- 14. Add the coarse tomato chunks to the mixture.
- 15. Add the coriander to the bowl.
- 16. Add the vinegar to the bowl.
- 17. Add the sugar to the bowl.
- 18. Add the orange juice to the bowl.
- 19. Season the mixture with salt.
- 20. Mix all ingredients thoroughly.
- 21. Transfer the relish mixture into a pot.
- 22. Place the pot over medium heat.
- 23. Simmer the relish for one hour.
- 24. Stir the relish repeatedly while cooking.
- 25. Remove the pot from the heat when the time is up.
- 26. Let the finished relish cool down.
- 27. Wash the herbs.
- 28. Spin the herbs dry.
- 29. Pluck the leaves off the herb stems.
- 30. Separate the leaves from the lettuce head.
- 31. Wash the lettuce leaves.
- 32. Remove hard stems or damaged parts from the lettuce (clean).
- 33. Shake the lettuce dry.
- 34. Wash the tomatoes for the slices.
- 35. Remove the stem core from the tomatoes.
- 36. Slice the tomatoes.
- 37. Toast the bread slices.
- 38. Remove the crust from the toast slices.
- 39. Place the toast slices side by side on the work surface.
- 40. Spread the cooled relish onto the toast slices.
- 41. Distribute the tomato slices on half of the toast slices.
- 42. Place the meat on top of the tomato slices.
- 43. Add the lettuce on top of the meat.
- 44. Add the herbs on top of the lettuce.
- 45. Cover the filled toast slices with the remaining toast slices.
- 46. Secure the sandwiches with a wooden skewer.
- 47. Serve the toasts.
