🍽️ Crispy Goat Cheese Toast with Raspberries

Ingredients
- 4 handfuls young lettuce (e.g. oak leaf, arugula, red beet)
- 200 g goat cheese (roll)
- 4 slices whole grain baguette
- 2 tbsp honey
- 1 tsp walnut oil
- salt
- pepper
- 0.5 dried thyme
- 0.5 tsp sweet paprika powder
- 100 g fresh raspberries
- 30 g cashew nuts
- 100 g cranberries (jar)
Instructions
- 1. Wash the salad thoroughly.
- 2. Spin the salad dry.
- 3. Plate the salad onto four dishes.
- 4. Slice the goat cheese into approximately 1 cm thick slices.
- 5. Place the cheese slices onto the bread slices.
- 6. Place a sheet of baking paper onto a baking tray.
- 7. Stack the cheese-topped bread slices into towers.
- 8. Place the baking trays into the preheated oven.
- 9. Set the oven to 220 °C with the grill function.
- 10. Whisk honey, walnut oil, salt, pepper, thyme, and paprika together in a small bowl.
- 11. Brush the cheese slices with the spice mixture.
- 12. Place the trays on the top rack in the oven.
- 13. Grill the toasts for about 5 minutes until golden brown.
- 14. Remove the raspberries from their stems.
- 15. Rinse the raspberries carefully.
- 16. Pat the raspberries dry with a kitchen towel.
- 17. Take the toasts out of the oven.
- 18. Place the hot toasts onto the salad plates.
- 19. Sprinkle the toasts with cashew nuts.
- 20. Garnish the dishes with the raspberries.
- 21. Serve with one tablespoon of cranberries each.
