🍽️ Grilled Vegetable Toast with Mozzarella

Ingredients
- 1 eggplant
- 1 zucchini
- salt
- 1 red bell pepper
- 4 slices toast bread
- 1 clove of garlic
- 2 sprigs thyme
- 4 tbsp olive oil
- pepper (from the mill)
- 300 g mozzarella
- basil (for garnish)
Instructions
- 1. Wash the eggplant and the zucchini under running water.
- 2. Remove the tough ends from both vegetables.
- 3. Slice the eggplant and the zucchini lengthwise into thin slices.
- 4. Season the slices with salt and let them stand for ten minutes.
- 5. Pat the released water dry from the slices using a kitchen towel.
- 6. Wash the bell pepper and remove the inside including the seeds.
- 7. Cut the bell pepper into thin strips.
- 8. Place the toast slices on the grill and toast them until golden brown.
- 9. Peel the garlic clove and chop it finely.
- 10. Pluck the thyme leaves from the stems.
- 11. Mix the chopped garlic, thyme leaves, and oil in a small bowl.
- 12. Brush the prepared vegetables with the oil-garlic mixture.
- 13. Season the vegetables with salt and pepper.
- 14. Grill the vegetables for five to six minutes until they are tender.
- 15. Distribute the grilled vegetables evenly over the toast slices.
- 16. Place a piece of mozzarella on each toast slice.
- 17. Garnish the toasts with fresh basil and serve immediately.
