  1. 1. Wash the eggplant and the zucchini under running water.
  2. 2. Remove the tough ends from both vegetables.
  3. 3. Slice the eggplant and the zucchini lengthwise into thin slices.
  4. 4. Season the slices with salt and let them stand for ten minutes.
  5. 5. Pat the released water dry from the slices using a kitchen towel.
  6. 6. Wash the bell pepper and remove the inside including the seeds.
  7. 7. Cut the bell pepper into thin strips.
  8. 8. Place the toast slices on the grill and toast them until golden brown.
  9. 9. Peel the garlic clove and chop it finely.
  10. 10. Pluck the thyme leaves from the stems.
  11. 11. Mix the chopped garlic, thyme leaves, and oil in a small bowl.
  12. 12. Brush the prepared vegetables with the oil-garlic mixture.
  13. 13. Season the vegetables with salt and pepper.
  14. 14. Grill the vegetables for five to six minutes until they are tender.
  15. 15. Distribute the grilled vegetables evenly over the toast slices.
  16. 16. Place a piece of mozzarella on each toast slice.
  17. 17. Garnish the toasts with fresh basil and serve immediately.
