  1. 1. Place the dumpling bread into a large bowl.
  2. 2. Bring the milk to a boil and pour it directly over the bread.
  3. 3. Cut the bacon into small cubes and add them to the bread.
  4. 4. Peel the onion and chop it finely.
  5. 5. Sauté the onions in a hot pan with 1 tbsp of butter until translucent.
  6. 6. Stir the parsley into the onions.
  7. 7. Add the onion-parsley mixture to the dumpling bread.
  8. 8. Add the eggs to the bowl.
  9. 9. Season the mixture with salt, pepper, and nutmeg.
  10. 10. Mix all ingredients thoroughly.
  11. 11. Let the dough rest for approx. 15 minutes.
  12. 12. Knead the dough briefly afterwards.
  13. 13. If the dough is too soft, add breadcrumbs.
  14. 14. If the dough is too firm, add a little milk.
  15. 15. Shape 12 dumplings with moistened hands.
  16. 16. Slowly heat the remaining butter in a pot until it is golden brown.
  17. 17. Skim off the foam that forms.
  18. 18. Lift the dumplings out of the water with a slotted spoon.
  19. 19. Let the dumplings drain well.
  20. 20. Arrange the dumplings on deep plates.
  21. 21. Pour the brown butter over the dumplings.
  22. 22. Sprinkle the dumplings with chives.
  23. 23. Serve the dumplings immediately.
