🍽️ Tiroler Speck Dumplings

Ingredients
- 750 g Bread for dumplings
- 500 ml Milk
- 200 g Bacon
- 1 Onion
- 100 g Butter
- 2 tbsp freshly chopped parsley
- 3 Eggs
- Salt
- Pepper (from the mill)
- Nutmeg (freshly grated)
- Breadcrumbs (as needed)
- 4 tbsp Chive rings
Instructions
- 1. Place the dumpling bread into a large bowl.
- 2. Bring the milk to a boil and pour it directly over the bread.
- 3. Cut the bacon into small cubes and add them to the bread.
- 4. Peel the onion and chop it finely.
- 5. Sauté the onions in a hot pan with 1 tbsp of butter until translucent.
- 6. Stir the parsley into the onions.
- 7. Add the onion-parsley mixture to the dumpling bread.
- 8. Add the eggs to the bowl.
- 9. Season the mixture with salt, pepper, and nutmeg.
- 10. Mix all ingredients thoroughly.
- 11. Let the dough rest for approx. 15 minutes.
- 12. Knead the dough briefly afterwards.
- 13. If the dough is too soft, add breadcrumbs.
- 14. If the dough is too firm, add a little milk.
- 15. Shape 12 dumplings with moistened hands.
- 16. Slowly heat the remaining butter in a pot until it is golden brown.
- 17. Skim off the foam that forms.
- 18. Lift the dumplings out of the water with a slotted spoon.
- 19. Let the dumplings drain well.
- 20. Arrange the dumplings on deep plates.
- 21. Pour the brown butter over the dumplings.
- 22. Sprinkle the dumplings with chives.
- 23. Serve the dumplings immediately.
