  1. 1. Mix both types of flour with the baking powder and espresso powder in a large mixing bowl.
  2. 2. Sift the cocoa powder over the flour mixture and stir it in well.
  3. 3. Dice the cold butter into small pieces.
  4. 4. Add the butter cubes along with the sugar, vanilla powder, salt, and egg to the flour mixture.
  5. 5. Knead everything into a smooth dough using the dough hooks of a hand mixer.
  6. 6. If necessary, knead the dough briefly by hand at the end.
  7. 7. Shape the dough into a ball and press it slightly flat.
  8. 8. Wrap the dough in cling film.
  9. 9. Place the dough in the refrigerator for at least one hour.
  10. 10. Sprinkle some flour on a work surface.
  11. 11. Roll out the dough on the floured surface to a thickness of about two millimeters.
  12. 12. Cut out medium-sized stars from the dough using a cookie cutter.
  13. 13. Knead the leftover dough scraps back together.
  14. 14. Roll out the dough again and cut out more stars.
  15. 15. Line a baking tray with baking paper.
  16. 16. Place the stars on the baking tray.
  17. 17. Preheat the oven to 180 degrees Celsius conventional heat (160 degrees Celsius fan-forced or gas level 2 to 3).
  18. 18. Bake the stars for nine to ten minutes in the preheated oven.
  19. 19. Remove the stars from the oven.
  20. 20. Let the stars cool completely on a wire rack.
  21. 21. Chop the chocolate coating into small pieces.
  22. 22. Place the chocolate coating in a bowl.
  23. 23. Melt the chocolate coating while stirring in a warm water bath or carefully in the microwave.
  24. 24. Let the melted chocolate cool down slightly.
  25. 25. Place the mascarpone in a separate bowl.
  26. 26. Beat the mascarpone until smooth using the beaters of a hand mixer.
  27. 27. Sift 40 grams of powdered sugar over the mascarpone.
  28. 28. Stir the powdered sugar into the mascarpone.
  29. 29. Add the melted chocolate coating and the syrup to the mascarpone mixture.
  30. 30. Stir everything well until a smooth mass forms.
  31. 31. Spread the mascarpone mixture with a teaspoon onto 40 cooled stars.
  32. 32. Place the remaining stars on top of the spread stars.
  33. 33. Press the stars together slightly.
  34. 34. Let the stars dry.
  35. 35. Dust the tiramisu stars with the remaining powdered sugar and cocoa powder.
  36. 36. Place the stars in a cookie tin.
  37. 37. Separate the individual layers in the tin with kitchen paper.
  38. 38. Store the tin in a cool place.
