🍰 Tiramisu Stars

Ingredients
- 100 g wheat wholemeal flour
- 130 g flour (Type 405)
- 1 tsp. baking powder
- 2 tsp soluble espresso powder (instant)
- 1 tbsp cocoa powder
- 120 g yogurt butter (well chilled)
- 60 g brown raw cane sugar
- 1 pinch vanilla powder
- 1 pinch salt
- 1 very fresh egg
- 40 g white chocolate coating
- 50 g mascarpone
- 50 g powdered sugar from raw cane sugar
- 1 tbsp almond syrup
Instructions
- 1. Mix both types of flour with the baking powder and espresso powder in a large mixing bowl.
- 2. Sift the cocoa powder over the flour mixture and stir it in well.
- 3. Dice the cold butter into small pieces.
- 4. Add the butter cubes along with the sugar, vanilla powder, salt, and egg to the flour mixture.
- 5. Knead everything into a smooth dough using the dough hooks of a hand mixer.
- 6. If necessary, knead the dough briefly by hand at the end.
- 7. Shape the dough into a ball and press it slightly flat.
- 8. Wrap the dough in cling film.
- 9. Place the dough in the refrigerator for at least one hour.
- 10. Sprinkle some flour on a work surface.
- 11. Roll out the dough on the floured surface to a thickness of about two millimeters.
- 12. Cut out medium-sized stars from the dough using a cookie cutter.
- 13. Knead the leftover dough scraps back together.
- 14. Roll out the dough again and cut out more stars.
- 15. Line a baking tray with baking paper.
- 16. Place the stars on the baking tray.
- 17. Preheat the oven to 180 degrees Celsius conventional heat (160 degrees Celsius fan-forced or gas level 2 to 3).
- 18. Bake the stars for nine to ten minutes in the preheated oven.
- 19. Remove the stars from the oven.
- 20. Let the stars cool completely on a wire rack.
- 21. Chop the chocolate coating into small pieces.
- 22. Place the chocolate coating in a bowl.
- 23. Melt the chocolate coating while stirring in a warm water bath or carefully in the microwave.
- 24. Let the melted chocolate cool down slightly.
- 25. Place the mascarpone in a separate bowl.
- 26. Beat the mascarpone until smooth using the beaters of a hand mixer.
- 27. Sift 40 grams of powdered sugar over the mascarpone.
- 28. Stir the powdered sugar into the mascarpone.
- 29. Add the melted chocolate coating and the syrup to the mascarpone mixture.
- 30. Stir everything well until a smooth mass forms.
- 31. Spread the mascarpone mixture with a teaspoon onto 40 cooled stars.
- 32. Place the remaining stars on top of the spread stars.
- 33. Press the stars together slightly.
- 34. Let the stars dry.
- 35. Dust the tiramisu stars with the remaining powdered sugar and cocoa powder.
- 36. Place the stars in a cookie tin.
- 37. Separate the individual layers in the tin with kitchen paper.
- 38. Store the tin in a cool place.
