🍰 Classic Tiramisu with Espresso and Biscuits

Ingredients
- 1 sheet gelatin
- 3 egg yolks
- 3 tbsp honey
- 2 double espresso
- 300 g mascarpone
- 100 ml whipping cream
- 30 g powdered sugar
- 16 ladyfingers
- chocolate coffee bean (for garnishing)
- cocoa powder (for dusting)
Instructions
- 1. Place the gelatin in a bowl with cold water and let it bloom.
- 2. Whisk the egg yolks together with the honey until creamy, about 5 minutes.
- 3. Squeeze the soaked gelatin well and dissolve it in one of the two hot espressos.
- 4. Gently fold the mascarpone into the egg mixture.
- 5. Stir the espresso with the dissolved gelatin into the mascarpone cream.
- 6. Whip the cream together with the powdered sugar until stiff.
- 7. Gently fold the whipped cream into the mascarpone mixture.
- 8. Break the ladyfingers into small pieces.
- 9. Distribute half of the biscuit pieces evenly among 4 glasses.
- 10. Drizzle the remaining espresso over the biscuit pieces.
- 11. Add half of the cream on top of the biscuit-espresso layer.
- 12. Top the glasses with the remaining ladyfingers.
- 13. Add the remaining cream as the top layer.
- 14. Place the glasses in the refrigerator for about 3 hours.
- 15. Dust the tiramisu with cocoa powder shortly before serving.
- 16. Decorate the glasses with chocolate coffee beans.
