  1. 1. Boil coffee with sugar, let it simmer for 5 minutes, then allow to cool.
  2. 2. Mix mascarpone with crème fraîche until smooth. Combine coffee syrup (except for 8 tablespoons) with vanilla extract and gradually fold into the cream.
  3. 3. Place in the freezer, stirring occasionally, or finish in an ice cream maker. The ice cream should remain creamy.
  4. 4. Mix the remaining syrup with liqueur. Crumble the sponge cake and soak it in the mixture.
  5. 5. Fill glasses, add the ice cream on top, and freeze. Remove 10 minutes before serving and dust with cocoa.
