  1. 1. Separate the eggs. Put the egg yolks and half of the sugar into a bowl.
  2. 2. Place the bowl over a pot with hot water (bain-marie).
  3. 3. Whisk the mixture with the hand mixer until white and creamy.
  4. 4. Remove the bowl from the heat.
  5. 5. Continue stirring until the cream has cooled down.
  6. 6. Stir in the mascarpone gradually.
  7. 7. Whip the egg whites with the remaining sugar until stiff.
  8. 8. Gently fold the egg whites into the mascarpone cream.
  9. 9. Whip the cream until stiff.
  10. 10. Fold the whipped cream into the mixture.
  11. 11. Dip half of the ladyfingers briefly into the coffee.
  12. 12. Line the bottom of a shallow dish (approx. 18x25 cm) with the biscuits.
  13. 13. Spread half of the mascarpone cream on top.
  14. 14. Smooth the cream evenly.
  15. 15. Dip the remaining ladyfingers briefly into the coffee.
  16. 16. Place a second layer of biscuits on top of the cream.
  17. 17. Spread the remaining cream over the second layer of biscuits.
  18. 18. Chill the tiramisu in the refrigerator for at least 3 hours.
  19. 19. Dust the finished tiramisu generously with cocoa powder before serving.
