🍰 Classic Tiramisu

Ingredients
- 3 eggs
- 80 g cane sugar
- 500 g mascarpone
- 100 ml whipping cream
- 200 ml coffee
- 20 ladyfingers
- cocoa powder (for dusting)
Instructions
- 1. Separate the eggs. Put the egg yolks and half of the sugar into a bowl.
- 2. Place the bowl over a pot with hot water (bain-marie).
- 3. Whisk the mixture with the hand mixer until white and creamy.
- 4. Remove the bowl from the heat.
- 5. Continue stirring until the cream has cooled down.
- 6. Stir in the mascarpone gradually.
- 7. Whip the egg whites with the remaining sugar until stiff.
- 8. Gently fold the egg whites into the mascarpone cream.
- 9. Whip the cream until stiff.
- 10. Fold the whipped cream into the mixture.
- 11. Dip half of the ladyfingers briefly into the coffee.
- 12. Line the bottom of a shallow dish (approx. 18x25 cm) with the biscuits.
- 13. Spread half of the mascarpone cream on top.
- 14. Smooth the cream evenly.
- 15. Dip the remaining ladyfingers briefly into the coffee.
- 16. Place a second layer of biscuits on top of the cream.
- 17. Spread the remaining cream over the second layer of biscuits.
- 18. Chill the tiramisu in the refrigerator for at least 3 hours.
- 19. Dust the finished tiramisu generously with cocoa powder before serving.
