  1. 1. Prep the fridge so it is ready.
  2. 2. Separate the eggs. Put the yolks in one bowl and the whites in another.
  3. 3. Whisk the yolks with the sugar until creamy and pale, ideally using a hand mixer.
  4. 4. Stir the mascarpone cheese into the yolk-sugar mixture.
  5. 5. Whip the egg whites until they form stiff peaks.
  6. 6. Gently fold the whipped egg whites into the mascarpone cream.
  7. 7. Mix the coffee with the brandy in a shallow dish.
  8. 8. Dip the ladyfingers briefly into the coffee mixture.
  9. 9. Place the soaked biscuits into a shallow dish (approx. 18x25 cm).
  10. 10. Spread half of the mascarpone cream over the biscuit layer.
  11. 11. Smooth out the cream.
  12. 12. Place a second layer of soaked biscuits on top.
  13. 13. Spread the remaining cream evenly on top.
  14. 14. Place the dish in the fridge for at least 3 hours.
  15. 15. Cut the tiramisu into pieces before serving.
  16. 16. Dust it with cocoa powder.
  17. 17. Garnish with coffee beans.
