🍰 Classic Tiramisu

Ingredients
- 200 ml Espresso
- 4 egg yolks
- 60 g sugar
- 250 g mascarpone
- 2 sheets gelatin
- 120 g ladyfingers
- 3 tsp cocoa powder
- 100 g almond kernels (sliced)
- 2 carambolas
- 4 kumquats
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Soak the gelatin leaves in a bowl of cold water.
- 3. Beat the egg yolks with the sugar in a mixing bowl until creamy and pale.
- 4. Stir the mascarpone cheese into the egg yolk and sugar mixture.
- 5. Squeeze the soaked gelatin well and melt it in a hot water bath.
- 6. Stir the melted gelatin with a small spoonful of the mascarpone cream.
- 7. Gently fold the gelatin mixture into the rest of the mascarpone cream.
- 8. Dip the ladyfingers briefly into the espresso.
- 9. Place the dipped biscuits in a shallow baking dish.
- 10. Pour half of the mascarpone cream over the biscuit layer.
- 11. Place a second layer of dipped ladyfingers on top.
- 12. Pour the remaining mascarpone cream evenly over the top.
- 13. Place the baking dish in the refrigerator for four hours.
- 14. Dust the tiramisu generously with cocoa powder before serving.
- 15. Scatter the almond slices over the surface.
- 16. Wash the fruits and pat them dry.
- 17. Slice the fruits into thin pieces.
- 18. Garnish the plates with the fruit slices.
- 19. Place a piece of tiramisu on each plate.
