  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Line a baking sheet (approx. 30x40 cm) with baking paper.
  3. 3. Separate the eggs and set the egg whites aside.
  4. 4. Whisk the egg whites with the lemon juice and half of the sugar until stiff peaks form.
  5. 5. Whisk the egg yolks with the remaining sugar until frothy.
  6. 6. Mix flour, starch, and baking powder in a separate bowl.
  7. 7. Gently fold the egg whites into the egg yolk mixture.
  8. 8. Sift the flour mixture over the batter and gently fold it in.
  9. 9. Remove half of the batter and stir in cocoa powder.
  10. 10. Place a strip of aluminum foil in the center of the baking sheet.
  11. 11. Distribute the light and dark batter evenly on the sheet.
  12. 12. Bake the sponge cake for 10 to 12 minutes.
  13. 13. Allow the sponge cake to cool completely.
  14. 14. Mix the mascarpone with the cream, sugar, and vanilla sugar.
  15. 15. Whip the cream until smooth.
  16. 16. Stir about half of the cocoa powder into the cream.
  17. 17. Cut the cooled sponge cake into 4 equal pieces (each approx. 20x15 cm).
  18. 18. Place a light sponge piece into a suitable dish.
  19. 19. Drizzle the sponge piece with about 1 tablespoon of espresso.
  20. 20. Spread approx. 1/4 of the cream evenly over it.
  21. 21. Place a dark sponge piece on top.
  22. 22. Drizzle this piece with espresso as well.
  23. 23. Spread it with the cream.
  24. 24. Repeat the layering process two more times.
  25. 25. Stir the remaining cocoa powder into the cream for the top layer.
  26. 26. Spread the cream evenly over the top layer.
  27. 27. Let the tiramisu chill in the refrigerator overnight.
  28. 28. Decorate the tiramisu with whipped cream, cookie pieces, and mint before serving.
