🍰 Classic Tiramisu

Ingredients
- 4 eggs
- 1 tbsp lemon juice
- 100 g sugar
- 80 g flour
- 20 g cornstarch
- 1 tsp baking powder
- 20 g cocoa powder
- 400 g mascarpone
- 100 ml heavy cream
- 30 g sugar
- 1 tbsp vanilla sugar
- 30 g cocoa powder
- 40 ml cold espresso
- 100 ml heavy cream (whipped stiff)
- 60 g chocolate cookies (crumbled)
- mint leaves
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Line a baking sheet (approx. 30x40 cm) with baking paper.
- 3. Separate the eggs and set the egg whites aside.
- 4. Whisk the egg whites with the lemon juice and half of the sugar until stiff peaks form.
- 5. Whisk the egg yolks with the remaining sugar until frothy.
- 6. Mix flour, starch, and baking powder in a separate bowl.
- 7. Gently fold the egg whites into the egg yolk mixture.
- 8. Sift the flour mixture over the batter and gently fold it in.
- 9. Remove half of the batter and stir in cocoa powder.
- 10. Place a strip of aluminum foil in the center of the baking sheet.
- 11. Distribute the light and dark batter evenly on the sheet.
- 12. Bake the sponge cake for 10 to 12 minutes.
- 13. Allow the sponge cake to cool completely.
- 14. Mix the mascarpone with the cream, sugar, and vanilla sugar.
- 15. Whip the cream until smooth.
- 16. Stir about half of the cocoa powder into the cream.
- 17. Cut the cooled sponge cake into 4 equal pieces (each approx. 20x15 cm).
- 18. Place a light sponge piece into a suitable dish.
- 19. Drizzle the sponge piece with about 1 tablespoon of espresso.
- 20. Spread approx. 1/4 of the cream evenly over it.
- 21. Place a dark sponge piece on top.
- 22. Drizzle this piece with espresso as well.
- 23. Spread it with the cream.
- 24. Repeat the layering process two more times.
- 25. Stir the remaining cocoa powder into the cream for the top layer.
- 26. Spread the cream evenly over the top layer.
- 27. Let the tiramisu chill in the refrigerator overnight.
- 28. Decorate the tiramisu with whipped cream, cookie pieces, and mint before serving.
