  1. 1. Mix the espresso with the cognac.
  2. 2. Cut open the vanilla pod and add the seeds to the egg yolk and sugar mixture.
  3. 3. Whisk the egg yolks and sugar until creamy.
  4. 4. Let the gelatin soak in cold water.
  5. 5. Gently warm the soaked gelatin in a small saucepan.
  6. 6. Stir a portion of the mascarpone into the warm gelatin.
  7. 7. Stir the remaining mascarpone into the egg yolk and sugar mixture in portions.
  8. 8. Combine the gelatin-mascarpone mixture with the rest of the cream.
  9. 9. Line a large rectangular dish with half of the ladyfingers.
  10. 10. Drizzle half of the espresso over the biscuits.
  11. 11. Spread half of the mascarpone cream evenly over the biscuits.
  12. 12. Place the remaining ladyfingers on top.
  13. 13. Drizzle the second layer of biscuits with the remaining espresso.
  14. 14. Add the remaining mascarpone cream on top.
  15. 15. Cover the dish with cling film.
  16. 16. Let the tiramisu set in the refrigerator for 2 hours.
  17. 17. Generously dust the finished tiramisu with cocoa powder before serving.
