🍽️ Portuguese-style Squid Salad with Peppers and Olives

Ingredients
- 2 yellow bell peppers
- 1 onion
- 2 garlic cloves
- 500 g squid rings (fresh or frozen)
- 6 tbsp olive oil
- salt
- pepper (from the mill)
- 200 ml dry white wine
- 80 g black olives (pitted)
- parsley
- 3 tbsp lemon juice
Instructions
- 1. Thaw the frozen squid rings. Wash fresh squid rings thoroughly and let them drain well.
- 2. Wash the peppers. Cut them in half lengthwise and remove the core along with all white inner membranes. Cut the flesh into bite-sized pieces.
- 3. Peel the onion and the garlic. Dice both ingredients into very fine cubes.
- 4. Heat three tablespoons of oil in a pan. Fry the pepper pieces while stirring for about five minutes. Remove the peppers from the pan and set them aside.
- 5. Add the garlic, onion, and squid rings to the same pan. Sauté the mixture briefly.
- 6. Season the dish with salt and pepper. Pour in the wine and let it simmer for two to four minutes.
- 7. Slice the olives into thin rings.
- 8. Whisk olive oil, lemon juice, salt, and pepper in a small bowl to prepare the dressing. Taste the sauce one last time to adjust seasoning.
- 9. Combine the squid rings with the peppers, olive rings, and parsley. Add the dressing and toss everything gently.
- 10. Taste the salad once more. Serve the dish lukewarm.
