  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Wash the chicken thoroughly and pat it dry with a kitchen towel.
  3. 3. Wash the thyme sprigs and shake off excess water.
  4. 4. Peel the garlic cloves and the shallots.
  5. 5. Rinse the lemons under hot water.
  6. 6. Cut one lemon in half and squeeze out the juice.
  7. 7. Slice the second lemon into thin rounds.
  8. 8. Mix the lemon slices with some olive oil, half of the thyme sprigs, the garlic, the shallots, salt, and pepper.
  9. 9. Stuff this mixture inside the chicken.
  10. 10. Tie the chicken legs together with kitchen twine.
  11. 11. Whisk the lemon juice with the honey, the remaining olive oil, salt, and pepper to make a sauce.
  12. 12. Brush the chicken with this sauce.
  13. 13. Place the chicken in a lightly oiled baking dish.
  14. 14. Tie the remaining thyme around the chicken.
  15. 15. Serve the dish with rice and carrots.
