🍽️ Lemon Thyme Chicken

Ingredients
- 1 chicken (approx. 1,4 kg, ready for cooking)
- 1 handful thyme
- 2 garlic cloves
- 2 shallots
- 2 unwaxed lemons
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 1 tbsp honey
- fat (for the dish)
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Wash the chicken thoroughly and pat it dry with a kitchen towel.
- 3. Wash the thyme sprigs and shake off excess water.
- 4. Peel the garlic cloves and the shallots.
- 5. Rinse the lemons under hot water.
- 6. Cut one lemon in half and squeeze out the juice.
- 7. Slice the second lemon into thin rounds.
- 8. Mix the lemon slices with some olive oil, half of the thyme sprigs, the garlic, the shallots, salt, and pepper.
- 9. Stuff this mixture inside the chicken.
- 10. Tie the chicken legs together with kitchen twine.
- 11. Whisk the lemon juice with the honey, the remaining olive oil, salt, and pepper to make a sauce.
- 12. Brush the chicken with this sauce.
- 13. Place the chicken in a lightly oiled baking dish.
- 14. Tie the remaining thyme around the chicken.
- 15. Serve the dish with rice and carrots.
