  2. 2. Carefully pick the fine thyme leaves off the woody stems.
  3. 3. Place the thyme leaves into a small bowl.
  4. 4. Squeeze the juice of half a lemon directly into the bowl.
  5. 5. Add three tablespoons of olive oil.
  6. 6. Grind some pink peppercorns into the mixture.
  7. 7. Stir all ingredients vigorously with a fork or small spoon until well combined.
  8. 8. Adjust the flavor to your liking with a pinch of salt, if desired.
  9. 9. Brush the finished oil onto grilled lamb or poultry.
