  3. 3. Peel off the outer skin of the lemons.
  4. 4. Finely chop the lemon peel.
  5. 5. Pick the leaves off the thyme stems.
  6. 6. Roughly chop the thyme leaves.
  7. 7. Place the salt, thyme leaves, and lemon peel into a mortar.
  8. 8. Coarsely crush the mixture with the pestle.
  9. 9. Spread the mixture thinly on a surface.
  10. 10. Let the mixture dry for about two days.
  11. 11. Fill the finished salt into a jar.
  12. 12. Store the jar in a dry place.
