🍽️ Crispy Thyme Chicken

Ingredients
- 1.4 kg roasting chicken (1 roasting chicken)
- sea salt
- pepper
- 4 unpeeled lemons
- 6 sprigs thyme
- 50 g butter
- 350 ml poultry stock
- 1 tbsp honey
- 1 tbsp sherry
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Set the heating function to top and bottom heat.
- 2. Rinse the chicken under running water. Then pat it completely dry with a kitchen towel.
- 3. Season the inside of the chicken with salt and pepper.
- 4. Cut the lemons in half. Place four lemon halves along with three to four sprigs of thyme inside the chicken.
- 5. Tie the chicken together with kitchen twine. Place it breast-side up in a roasting dish.
- 6. Melt the butter in a pot. Season the melted butter with salt and pepper.
- 7. Brush the chicken evenly with some of the seasoned butter.
- 8. Arrange the remaining lemon halves and thyme sprigs around the chicken in the dish.
- 9. Pour some meat stock into the roasting dish.
- 10. Roast the chicken in the oven for about one hour. Baste it regularly with the stock from the dish.
- 11. Remove the chicken from the oven after the cooking time.
- 12. Mix the honey and sherry with the remaining butter.
- 13. Brush the chicken with this butter-honey mixture.
- 14. Return the chicken to the oven. Roast it at 240 degrees Celsius for 10 to 15 minutes until crispy.
- 15. Taste the roasting juices one last time before serving.
