  1. 1. Preheat the oven to 180 degrees Celsius. Set the heating function to top and bottom heat.
  2. 2. Rinse the chicken under running water. Then pat it completely dry with a kitchen towel.
  3. 3. Season the inside of the chicken with salt and pepper.
  4. 4. Cut the lemons in half. Place four lemon halves along with three to four sprigs of thyme inside the chicken.
  5. 5. Tie the chicken together with kitchen twine. Place it breast-side up in a roasting dish.
  6. 6. Melt the butter in a pot. Season the melted butter with salt and pepper.
  7. 7. Brush the chicken evenly with some of the seasoned butter.
  8. 8. Arrange the remaining lemon halves and thyme sprigs around the chicken in the dish.
  9. 9. Pour some meat stock into the roasting dish.
  10. 10. Roast the chicken in the oven for about one hour. Baste it regularly with the stock from the dish.
  11. 11. Remove the chicken from the oven after the cooking time.
  12. 12. Mix the honey and sherry with the remaining butter.
  13. 13. Brush the chicken with this butter-honey mixture.
  14. 14. Return the chicken to the oven. Roast it at 240 degrees Celsius for 10 to 15 minutes until crispy.
  15. 15. Taste the roasting juices one last time before serving.
