  1. 1. Wash the thyme under running water.
  2. 2. Shake the herb dry.
  3. 3. Carefully pluck the thyme leaves from the stems.
  4. 4. Clean the mushrooms with a kitchen towel.
  5. 5. Remove the tough stem base if necessary.
  6. 6. Pour the oil into a frying pan.
  7. 7. Add half of the thyme leaves to the pan.
  8. 8. Warm the oil slowly over medium heat.
  9. 9. Do not fry the thyme, just let it infuse.
  10. 10. Pour the balsamic vinegar into the pan.
  11. 11. Pour the cognac into the pan.
  12. 12. Bring the liquid to a boil.
  13. 13. Let the sauce reduce until it has decreased to about two-thirds of its original volume.
  14. 14. Pour the hot sauce through a fine mesh sieve.
  15. 15. Place the mushrooms in a bowl.
  16. 16. Pour the strained sauce directly over the mushrooms.
  17. 17. Mix the mushrooms and sauce thoroughly.
  18. 18. Add the remaining thyme.
  19. 19. Let the mushrooms marinate for at least 15 minutes.
  20. 20. Stir the mushrooms occasionally during the marinating time.
  21. 21. Season the mushrooms with salt.
  22. 22. Season the mushrooms with pepper.
  23. 23. Divide the mushrooms onto small serving dishes.
  24. 24. Serve the side dish with fresh bread.
