🍽️ Thyme Mushrooms

Ingredients
- 1 bunch thyme
- 1 kg mushrooms (fresh, brown)
- 4 tbsp cognac
- 150 ml balsamic vinegar
- 50 ml olive oil
- salt
- pepper
Instructions
- 1. Wash the thyme under running water.
- 2. Shake the herb dry.
- 3. Carefully pluck the thyme leaves from the stems.
- 4. Clean the mushrooms with a kitchen towel.
- 5. Remove the tough stem base if necessary.
- 6. Pour the oil into a frying pan.
- 7. Add half of the thyme leaves to the pan.
- 8. Warm the oil slowly over medium heat.
- 9. Do not fry the thyme, just let it infuse.
- 10. Pour the balsamic vinegar into the pan.
- 11. Pour the cognac into the pan.
- 12. Bring the liquid to a boil.
- 13. Let the sauce reduce until it has decreased to about two-thirds of its original volume.
- 14. Pour the hot sauce through a fine mesh sieve.
- 15. Place the mushrooms in a bowl.
- 16. Pour the strained sauce directly over the mushrooms.
- 17. Mix the mushrooms and sauce thoroughly.
- 18. Add the remaining thyme.
- 19. Let the mushrooms marinate for at least 15 minutes.
- 20. Stir the mushrooms occasionally during the marinating time.
- 21. Season the mushrooms with salt.
- 22. Season the mushrooms with pepper.
- 23. Divide the mushrooms onto small serving dishes.
- 24. Serve the side dish with fresh bread.
