🍽️ Tuna steaks with mango tomato salsa on sweet potatoes

Ingredients
- 4 tuna steaks
- juice of one lime
- salt
- pepper
- 2 tbsp vegetable oil
- 4 tomatoes
- 1 fresh mango
- 2 spring onions
- 400 g sweet potatoes
- 2 tbsp olive oil
Instructions
- 1. Peel the sweet potatoes and wash them thoroughly.
- 2. Place the potatoes in boiling salted water and cook them for about 20 minutes until tender.
- 3. Drain the water and let the potatoes drain well.
- 4. Slice the drained sweet potatoes into even rounds.
- 5. Rinse the tuna briefly and pat it dry with kitchen paper.
- 6. Drizzle lime juice over the fish and season with salt and pepper.
- 7. Let the marinated tuna steaks rest for 10 minutes.
- 8. Cut the mango in half and remove the pit.
- 9. Remove the mango flesh and cut it into small cubes.
- 10. Wash the tomatoes and cut them into quarters.
- 11. Remove the seeds from the tomato quarters.
- 12. Dice the remaining tomato flesh finely.
- 13. Clean the spring onions and wash them.
- 14. Slice the spring onions into thin rings.
- 15. Heat two tablespoons of olive oil in a pan.
- 16. Fry the sweet potato slices in the hot oil for about 5 minutes until golden brown.
- 17. Turn the slices once while frying.
- 18. Season the sweet potatoes with salt at the end.
- 19. Heat some vegetable oil in a separate pan.
- 20. Pat the marinated fish dry again.
- 21. Fry the tuna steaks in the hot oil for about 3 minutes on each side.
- 22. Taste the finished fish and adjust with salt and freshly ground pepper.
- 23. Arrange the sweet potato slices on the plates.
- 24. Place the tuna steaks on top of the potatoes.
- 25. Add the mango and tomato cubes as salsa.
- 26. Sprinkle the dish with the spring onion rings at the end.
