  1. 1. Rinse the tuna under running water and pat it dry with a kitchen towel.
  2. 2. Cut the tuna into bite-sized cubes.
  3. 3. Whisk lemon juice, soy sauce, sherry, and sugar together in a shallow bowl.
  4. 4. Place the fish cubes in the marinade and turn them so they are well coated.
  5. 5. Let the fish cubes marinate in the refrigerator for about 1 hour.
  6. 6. Clean the mushrooms and prepare them.
  7. 7. Wash the spring onions and clean them.
  8. 8. Cut the white and light green parts of the spring onions into three sections.
  9. 9. Halve the bell pepper, remove the core, and scrape out the white inner membranes.
  10. 10. Cut the bell pepper into diamond shapes.
  11. 11. Peel the ginger and slice it into very thin pieces.
  12. 12. Remove the tuna from the marinade and pat it dry.
  13. 13. Thread the fish cubes, bell pepper diamonds, ginger slices, and spring onion sections onto the skewers in an alternating pattern.
  14. 14. Brush the skewers lightly with oil.
  15. 15. Season the skewers with salt and pepper.
  16. 16. Grill the skewers over medium heat for about 6 minutes.
  17. 17. Turn the skewers occasionally while grilling.
