  1. 1. Rinse the fresh lemon balm under cold water.
  2. 2. Gently shake the leaves dry.
  3. 3. Cut the lemon balm leaves into very fine strips.
  4. 4. Place the cut leaves into a small bowl.
  5. 5. Add one tablespoon of olive oil.
  6. 6. Add two tablespoons of lemon juice.
  7. 7. Season the mixture with freshly ground pepper.
  8. 8. Stir everything well until it forms a homogeneous sauce.
  9. 9. Get a melon baller ready.
  10. 10. Scoop nice balls out of the melon flesh.
  11. 11. Add the melon balls to the lemon-balm sauce.
  12. 12. Place the bowl in a cool spot.
  13. 13. Let the melon balls marinate in it.
  14. 14. Rinse the tuna under running water.
  15. 15. Pat the fish dry with a kitchen towel.
  16. 16. Cut the fish into twelve slices of equal thickness.
  17. 17. Drizzle the tuna slices with some lemon juice.
  18. 18. Season the slices with pepper.
  19. 19. Preheat a grill pan on the highest setting.
  20. 20. Add one tablespoon of olive oil to the hot pan.
  21. 21. Place the tuna slices in the pan.
  22. 22. Sear the fish on the first side for one to two minutes.
  23. 23. Turn the slices.
  24. 24. Sear the fish on the second side for one to two minutes as well.
  25. 25. Remove the tuna from the pan.
  26. 26. Season the fish with salt.
  27. 27. Take the marinated melon balls out of the sauce.
  28. 28. Place the tuna on a plate.
  29. 29. Garnish the plate with the melon balls.
  30. 30. Serve the dish immediately.
