  1. 1. Peel the garlic clove.
  2. 2. Sprinkle the garlic with a pinch of salt.
  3. 3. Mash the garlic into a paste using the flat side of a knife blade.
  4. 4. Rinse the chili pepper under running water.
  5. 5. Cut the chili pepper in half lengthwise.
  6. 6. Remove the seeds and white pith from the chili.
  7. 7. Finely chop the chili.
  8. 8. Rinse the lime under running water.
  9. 9. Dry the lime with a kitchen towel.
  10. 10. Grate about two teaspoons of fine zest from the lime.
  11. 11. Peel the lime so that you remove all of the white pith.
  12. 12. Carefully cut out the lime fillets between the membranes.
  13. 13. Catch the released juice in a small bowl.
  14. 14. Add the lime fillets and lime zest to the bowl with the juice.
  15. 15. Add the olive oil to the bowl.
  16. 16. Add the chopped chili to the bowl.
  17. 17. Add the mashed garlic to the bowl.
  18. 18. Add the sugar to the bowl.
  19. 19. Season the mixture with a pinch of salt.
  20. 20. Stir all the dressing ingredients well.
  21. 21. Rinse the tuna fillets under cold water.
  22. 22. Pat the tuna fillets dry with kitchen paper.
  23. 23. Season the tuna fillets with salt.
  24. 24. Season the tuna fillets with freshly ground pepper.
  25. 25. Coarsely crush the black cumin in a mortar.
  26. 26. Place the crushed black cumin on a large plate.
  27. 27. Roll the tuna fillets in the black cumin crust on all sides.
  28. 28. Place the crusted tuna fillets in an aluminum foil tray.
  29. 29. Preheat the grill.
  30. 30. Grill the tuna fillets on the hot grill.
  31. 31. Grill each side of the tuna for one to two minutes.
  32. 32. Cut the tuna into slices or pieces as you prefer.
  33. 33. Serve the tuna with the lime-garlic oil.
