🍽️ Grilled Tuna with Fresh Tomato and Bean Salad

Ingredients
- 1 small red chili pepper
- 1 clove garlic
- juice of one lime
- 2 tsp freshly grated ginger
- 5 tbsp dark soy sauce
- 2 tbsp fish sauce
- 1 tbsp sesame oil
- 1 tsp cornstarch
- 4 tuna steaks (200 g each)
- salt
- 600 g tomatoes
- 200 g black beans (from the can)
- 1 spring onion
- salt
- pepper (from the mill)
- 3 tbsp white wine vinegar
- 3 tbsp olive oil
- parsley (for garnish)
Instructions
- 1. Cut the chili in half lengthwise, remove the seeds, and wash it. Finely chop the chili.
- 2. Peel the garlic and chop it finely as well.
- 3. Mix the ginger, chili, and garlic in a bowl with soy sauce, fish sauce, sesame oil, and lime juice.
- 4. Bring the marinade to a brief boil and then let it cool down.
- 5. Stir the starch into the cooled marinade.
- 6. Turn the tuna steaks in the marinade so that they are completely covered.
- 7. Let the steaks marinate in the refrigerator for 1 hour.
- 8. Pour boiling water over the tomatoes briefly to blanch them (cook briefly in boiling water).
- 9. Shock the tomatoes with cold water and peel them.
- 10. Quarter the tomatoes, remove the core, and cut the flesh into cubes.
- 11. Drain the beans well in a sieve.
- 12. Wash the spring onions and remove the dry ends.
- 13. Cut the light green end of the spring onions into thin rings.
- 14. Finely chop the white end of the spring onions.
- 15. Whisk vinegar, oil, salt, and pepper together in a large bowl.
- 16. Add the tomato cubes, beans, and spring onions to the dressing mixture.
- 17. Gently toss the salad and let it marinate for 30 minutes.
- 18. Remove the tuna steaks from the marinade and let them drain well.
- 19. Scrape off any remaining marinade from the steaks.
- 20. Preheat the grill to high heat.
- 21. Sear the tuna steaks on the hot grill for just under 1 minute on each side.
- 22. Move the steaks to a cooler spot on the grill.
- 23. Grill the steaks at this spot for another 1 to 2 minutes per side.
- 24. Ensure that the steaks remain slightly pink inside (do not cook them completely through).
- 25. Plate the grilled tuna steaks.
- 26. Serve with the tomato and bean salad.
- 27. Garnish the dish with fresh parsley and serve.
